Chapman Grove Estate Cab Merlot

This is a 60-40 blend of Cabernet Sauvignon and Merlot. The wine is elegant and refined showing a clear red-purple colour; a fresh, bright and breezy wine, with red fruits to the fore and balanced tannins to hold the structure together.

Xanadu Circa 77 Cabernet Sauvignon

Deep red with ruby hues. The wine exhibits vibrant, characteristic aromas of ripe blackcurrants, blueberries, and dark plums meshed with hints of bay and liquorice and subtle spicy, toasty oak. The generous palate is packed full of juicy fruits of the forest, cassis and chocolate characters. Medium to full-bodied, the fleshy fruits are supported by moreish, supple and ripe tannins. A balanced wine, with a persistent fruit finish with beautiful regional savoury inflections of bay, black olive and liquorice.

Chapman Grove Reserve Merlot

This our very first straight Merlot produced from our vineyard. Dark red cherry colour with perfumes and hints of forest floor on the nose. The palate delivers a rich broad flavour of red and black fruits, with a tannin structure that will ensure this wine will age well. If you like your Merlot soft and fluffy this is not the wine for you. Drink this with a beef lasagne or roast capretto.

Handpicked Wines Regional Selections Margaret River Cabernet Sauvignon

TASTING NOTES This is a typical Margaret River Cabernet with layers of dark fruits, chocolate and dried herbs. It is richly-textured and has fine tannin and classic Cabernet drive. SEASON It was another fine season in Margret River, starting with above-average rainfall in winter to set up good ground moisture and healthy vines. The latter part of spring was warm, dry and calm, with no dramatic temperature spikes or dips, allowing flowering and fruit set to proceed unhampered. Even heavy rain events in December and January were well-timed to refresh the vineyard; both were followed by warm dry weather that mitigated disease pressure. It was somehow a warm, but mild season – warm enough for excellent slow ripening, with no severe heat spikes to damage fruit WINEMAKING The fruit is from select vineyards in Wilyabrup in the heart of Margaret River wine region. The fruit was destemmed and crushed then fermented in closed fermenters with pumping over. The wine was matured for 18 months in a mix of tank and barrel. Its everything we've come to expect from a Margaret River Cabernet Sauvignon.

Happs Estate Cabernet Merlot

Our first Cabernet Merlot was produced in 1982. We have always felt that the Merlot grape variety enhanced the Cabernet and in this case at 29%, the Merlot is more than a bit player. Indeed tasters sometimes suggest that the Merlot is dominant, with its velvety, rounded character. Merlot extends the flavour, enhances the finish and performs in a very positive fashion.
