Succulent aromas of apricot nectar, the palate displays luscious sweet marmalade and butterscotsh fruit, balanced with a crisp acid finish.

In the glass: Pale lemon green.On the nose: Lemongrass, lime and lemon zest. On the palate: Light, fresh and zesty with lovely ripe citrus flavours underpinned by racy acidity. A classic youthful and tight Hunter Semillon that will develop well in the cellar.

The Noble One by De Bortoli is considered Australia's premier dessert wine, and for obvious reasons. The wine has won countless awards at the leading wine shows around the country and has a wonderful propensity to develop even further in the bottle. The 2002 Noble One is a classic expression of the style with rich apricot treacle characters with fig and orange blossom still active on the nose and palate. Hints of vanilla bean and a refreshing acidity on the finish mean this decade old wine will continue to live in the cellar for many years more.

Teusner Albert Shiraz is made from old vines in the northern Barossa; rich black fruits and tarry cassis with smoky undertones, the finish is long and luscious. Could easily be cellared for the medium term.

Mitolo Wines is a family owned business, borne of and led by the founder and owner Frank Mitolo's vision; to create a range of wines of individuality, integrity and utmost quality. The G.A.M. is deep purple, the nose is an intense combination of smoked herbs, liquorice and blackcurrants leading to a full bodied palate with notes of cassis and cracked pepper. Calabria Pedro Ximenez & Semillon; a luscious, fortified wine of exceptional quality, wonderfully rich and decadent. Raisins, figs, dates and marmalade together with hints of rancio and banoffee pie. A dessert in itself, serve slightly chilled, though combining exceptionally well with ice-cream, blue cheese & charcuterie or even sticky ribs.

John Duval rose to winemaking fame as the craftsman of the mighty Penfolds Grange, before going it alone to further forge his reputation as a maker of great Shiraz. The aim of The Entity is to produce a wine true to the region. Rich and complex it shows ripe, spicy fruit characters with a complex savoury oak influence framed by fine lingering tannins.

Since the first vintage in 1982, De Bortoli Noble One has become an Australian icon and one of the world's most awarded dessert wines.

Complex mineral and flint aromas with a palate that has good length. Tyrrell's Stevens Semillon has wonderful balance between the fresh citrus flavours of youth and the aged 'toasty' characters. It is great with seafood dishes.

Taylors St Andrews Shiraz from the Clare Valley is a classic and is consistently a show-stopper. The bouquet shows rich plum and cherry fruit with earthy spice and the palate is perfectly balanced with soft silky tannins.
