Peated whisky was sourced from selected distilleries from mainly highland and speyside regions and carefully blended by the master blender Mr. Usami Ken and finished in Mizunara wood for more than 6 months.The Shinobu Distillery in collaboration with Niigata Beer Distillery is located in the Japanese seaside region of Niigata on the countrys western coast. The area is famous for its Three White Treasures: snow, rice and sake which have been cultivated there for centuries. Shinobu Pure Malt whiskies are crafted by master blender, Mr. Usami Ken who blends malts aged in sherry, bourbon and Hogshead casks before finishing them in Japans prized Mizunara Oak. Famous for imparting rich, honeyed flavors of apples, pears, cloves and nutmeg, Mizunara Oak has been used in Japan since the 1930s and is now sought-after by whisky makers around the world. In fact it is one of the biggest Australian whiskies available today. The malted barley is “peated” in northern Scotland and exhibits a more “Highland” style peat, which produces an “earthier” rounded peat smoke with minimal “medicinal/iodine” notes. If you are looking for the ultimate flavour experience that you will continue tasting long after the glass is dry, this whisky is for you Tasting Notes: Nose: A rich subdued peat aroma combined with a natural leathery earthiness with overtones of kumquat and fruit mince tart. Sweet but not sickly. Palate: The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoky peat that lingers on the lips and palette demanding just one more sip. Bushmills Single Malt Whiskey 21 year old is aged for a minimum of 19 years in former Oloroso Sherry and Bourbon-seasoned casks, then transferred into Madeira casks for a further 2 years. The result is a whiskey awarded Best Irish Single Malt 2013. It has huge depth that interweaves dried fruit flavours with spicy, aromatic maltiness and subtle nutty raisins notes.
