Made and hand bottled at the Great Southern Distillery in Albany on the harbour’s edge in Albany, this complex and elegant single malt whisky is distilled in traditional small batch copper pot stills from premium local barley. This whisky has been made using a peat from near the ‘Valley of the Giants’ and has been matured in an ex-bourbon American oak cask. Exhibiting spice and floral aromas when neat, a splash of water unleashes malted barley, and intense complex smoky aromas. Limeburners Peated has a full bodied taste and a superb smooth finish. Great Southern Distillery Limeburners Sherry Cask Cask Strength Single Malt Whisky has been matured in ex-bourbon American oak barrels and finished in an old Australian Sherry cask. From here it is transfer straight from barrel to bottle, creating a full and intense flavour. When served neat, this whisky has fruit and spice aromas, but add a splash of water and you get malted barley, honey and vanilla mixed with buttery caramel and raisins. Each unique barrel will exhibit its own unique characteristics, creating slight variation from batch to batch.

Not strictly a Japanese whisky, Togouchi source grain whiskies from Scotland & Canada and aged them in Japan. This is a blend from Chugoku Jozo, who mature their whiskies in a tunnel rather than a warehouse. The temperature of the tunnel is always 15 degrees while the temperature of the cellar at the headquarters in Hatsukaichi city is a little higher than that. Nutty, spicy whisky with a lovely butterscotch mouth feel. On the palate it expresses vanilla sweetness and a fine peat iodine, with hazelnuts and chocolate on the finish. Almost feels like a whisky/bourbon hybrid.

Ichiros Malt Wine Wood Reserve Pure Malt Japanese Whisky from the Ichiro's Malt series, containing whisky from the now closed Hanyu distillery. This whisky was matured, vatted and bottled at the Chichibu distillery. The whisky was finished in French wine casks. The nose has hints of black liquorice, creamy malt, and chocolate orange. The palate boasts oily walnuts, red berry sweetness, and white pepper. The finish lingers with Sherries spices and a little hint of chocolate.

Ichiro's Malt MWR Mizunara Wood Reserve Pure Malt Japanese Whisky was crafted by Ichiro Akuto and bottles in 2010. It is a vatting of various single malt whiskys previously aged in Japanese Mizunara oak. The nose is toasty and honeyed, light citrus and sweet, with hints of sugar in a bowl and grapefruit. The palate is fruity, tangy, rich, and spicy with hints of toffee apples and honey. The finish is abrupt but very spicy and very sweet.
