The Dalmore Cigar Malt Reserve is initially matured in American white oak ex-bourbon casks and rare 30 year old Matusalem oloroso sherry casks from the renowned Gonzalez Byass bodega. For its final flourish, it is further finessed in Cabernet Sauvignon wine barriques that gift the whisky its unique body and character. Cardhu 16 Year Old Single Malt Scotch Whisky 700ml (Special Release 2022) was matured in re-fill and re-charred American oak, then finished in Jamaican pot still rum-seasoned casks. A richer, fuller nose that has the hallmark traits of rum-finished whisky, there are soft fruits and pastry notes on the nose. The palate is spicier, certainly drier, and has hints of ginger, stone fruits, and perhaps some mint or eucalyptus.

Aged and bottled in Scotland by Chivas Brothers for 21 years, Royal Salute is unmatched by any other blend for its sheer mellowness. A highly exclusive spirit created for the connoisseur. This is a complex and rich Scotch Whisky with hints of chocolate, lemon, coconut, and tea. The whisky is aged in oak casks for 21 years before bottling. It is then bottled in porcelain flagons, produced by Wade porcelain. The Balvenie French Oak is a vibrant single malt finished in casks previously held wine from the French Charentes vineyards. Pineau des Charentes is a fortified wine made from unfermented grape juice, to which a Cognac eau-de-vie is added and then matured. Sixteen years of maturation in American Oak casks brings an abundance of vanilla spice and warm honey notes. The finishing in Pineau casks brings energizing grapefruit, geranium, glazed fruit and ginger. This is the first of The Balvenie finishes to explore French Oak. Pineau is akin to cognac in terms of production and flavour, allowing us to capitalise on the rise of this flavour profile and its premium credentials. The Balvenie USA brand ambassador Lorne Cousin suggested Malt Master David C. Stewart MBE explore these casks after a trip to the region with his family where he fondly remembers sipping an aperitif. Beautifully balanced light floral notes from lotus and geranium flowers dance between hints of fresh meadow grass and pealed apple skin. On the palate there is an energising zing from tangy lemon rind and grapefruit meet the delicate subtle sweetness of glazed fruits and spice from root ginger, with a refreshingly concise finish.

In ancient times, the land around I-Lan in Taiwan was called Kavalan, a mysterious land that was solely inhabited by the indigenous people of the Kavalan clan. The name was officially recognized by the Emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name. Kavalan had always been kept primitive and protected from the outside world by the Syue-shan mountain range which is abundant in high quality natural water that comes from deep within the mountain range. The mists of Kavalan and the spirits of the past have been created for you in this exquisite whisky. The process water is drawn from the springs in the Snow Mountain and Central Mountains imparting a smooth and creamy mouth feel to the whisky. Madeira is a rich fortified wine made on the Portuguese Madeira Islands, where the wine is aged and oxidized through heat. Kavalan’s tropical new make extracts the many rich fruit notes from the wine cask to create an irresistibly sweet yet delicate whisky. This cask of Solist Madeira, cask number D150514027A, was chosen and bottled exclusively for Australia, with only 211 bottles released.

Iron House Distilleries Tasman Whisky Port Cask Single Malt Whisky was matured in port barrels sources from Portugal and re-conditioned in Tasmania. Aged for 4 years, this whisky has a reddish orange ember hue in the glass. The nose has aromas of bold red wine, stone fruit, and buttery, but with a sweetened spiced aroma. This continues to the palate with flavours of dried dark fruit, red berried wine, orange zest, hazelnut oak warmth with hints of ruby tobacco sweet dark chocolate. Iron House Distillery is located at the edge of the Tasman Sea, where the old droving Hut Iron House once stood watchful.
