Develops a complex floral note of rose and wallflowers with crushed green herbs, coriander and gooseberry all underpinned by mixed spice. Sugar kelp adds to the complexity and richness and gives a dry maritime note. On The PalateRefreshing gin with good balance between the bitter juniper and pine and the sweet fruit flavours of mango, grapefruit and orange. A green herb flavour has developed of crushed coriander. Distinctive and smooth with a dry, flinty taste. On The FinishOverall a long, clean finish. As the juniper and citrus fade away, sweet vanilla and black pepper remain with a gentle reminder of the sea.

Umami Spirits has been part of Audemus portfolio for a long time. Umami Gin has been created after a long trip around Australia with Miko (Owner of Audemus Distillery). The point was to add a distillate of juniper distilled a low pressure (rotovap) to the initial recipe. An intriguing Gin designed for cocktail enthusiasts. Named after the fifth "basic taste", which is described as savoury. Umami Gin is produced with a caper distillate made from Sicilian capers, Parmesan and 2 other savoury ingredients, combined with a neutral grain spirit. Quite niche but very cool!

This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.
