For years, Ricky Evans has been itching to make Gamay in Tasmania. The problem was that no one was selling any. So, he took matters into his own hands and planted vines at his Three Wishes site in the Tamar Valley. This 2025 release is the debut vintage and a delicious payoff for all that patience and planning. The estate-grown fruit from the Tamar was treated to a "proper" carbonic maceration - 100% whole bunches sealed up for three weeks (ala classic Beaujolais Nouveau) to get that electric, aromatic lift. To balance that out, he sourced some fruit from the Bremley vineyard down south in the Coal River Valley, handling it more like a Pinot Noir to lock in a little more structure. The result is a total livewire. It captures the warmth of a near-perfect season, blending that signature carbonic crunch with joyful, delightful fruit. It is bright, juicy, and bursting with energy. This is a great new addition to the Havilah label and a serious win for Tassie Gamay lovers.
