Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. With 2008 being one of the greatest vintages recorded in modern history in South Australia, little gems like this 2008 Jamiesons Run Shiraz are worth their weight in gold. Ripe berry fruit with touches of mint chocolate biscuit and hints of black pepper spice. A few years in our climate controlled cellars has softened the tannins nicely to provide a fantastic value for money red wine suited to many cuisine types.

Logan's Apple Tree Flat wines pay homage to the people, places and experiences of the Logan winery on the label, but also within the bottle. Quality, varietal and terroir specific can be used to describe these wines and inparticular the Shiraz. In the glass the wine is a lovely crimson red colour which precedes a nose of fresh red berries and hint of earthen tones. In the mouth the wine truly sings with a mixture of berries, plums and spice.

Brothers Kym and John Davey are the winemaking team behind this quality expression of McLaren Vale Shiraz. Using modern viticultural practices that minimise work to the soil of their estate vineyard, ensures superior fruit is grown for the wine. Flavours of dark cherries and chocolate are finely framed with silky tannins and fresh acidity. Fine grained American and French oak are the thread that runs through this full-bodied Shiraz, tying together the opulent mid-palate and long, lingering finish.

The Grant Burge Winemakers Selection Shiraz is of one of our favourite full-bodied, Barossa Valley Shiraz's. With extraordinary depth, spicy white pepper, blue fruits, plums and blackberries, all underlined by crushed violets. The intensity is balanced with an outstanding finesse, supple oak handling and tannin grip exactly in the dosage prescribed to allow the mouthfeel to sing.

Especially when the sourcing here is premium all the way; the estate vineyards near Bendigo, plus top tier vineyards in Heathcote, the Pyrenees and Grampians regions. With all portions destined for far higher priced wines, this is a scoop to dive on. Cascading black and purple fruits, plush and silky from start to finish, all wrapped in lovely length and structure. Sensational!
