Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

The Barossa is home to some of the world’s oldest ungrafted Shiraz vines. The vines were planted in a pre-mechanized and pre-irrigation era where site selection was everything. Dry grown as bush vines with only the best soils, vine material and sites surviving the first years, and only the absolute pinnacle surviving the 100 years thereafter. The low-yielding ‘Centenarian’ vines, noted for their intensity of flavour, were planted more than a century ago around the time construction of the Château itself began. The select parcels are hand-picked and fermented in small open fermenters with hand plunging four times daily before careful basket pressing to extract tannin and colour. The initials RWT stand for ‘Red Winemaking Trial’, the name given to the project internally when developmental work began in 1995. Naturally, now no longer a ‘trial’, RWT Shiraz was launched in May 2000 with the 1997 vintage. Its style is opulent and fleshy, contrasting with Grange, which is more muscular and assertive. RWT is made from fruit primarily selected for its aromatic qualities and plush texture. RWT wines are built for the long haul, with the precision, concentration and balance to age for many years.The palate is generous, with voluminous and enveloping tannins, so silken they betray their density and persistence. This sturdy foundation provides a perfect canvas upon which to display the spoils of the harvest, layers of flavours roll over the palate in waves. Varietally correct and true to origin. Blue fruits, boysenberry, plum and mulberry are front and centre, a signature of RWT. A suggestion of crème brûlée and panforte provide a sweet counterpoint to complex notes of exotic spice and cedary oak.

Penfolds St Henri is one of Australia's greatest red wines. The Shiraz for St Henri is selected for subtlety and elegance and the finished wine has the structure complexity for extended bottle maturation. The 1991 is a classic St Henri vintage that is good to drink until 2022.

Elderton's Command Shiraz is one old school Barossa Shiraz. Named because of the special treatment the quality fruit 'commanded', this is a Shiraz of foreboding concentration. The fruit for this 'Excellent' Langton's classified Australian icon comes from the century old Elderton vineyard located on the banks of the Para River and is matured in a mixture of French and American oak. This allows the wine to retain its driven power while also giving the wine a level of complexity and balance unique to this region and producer. Elderton's Command can be enjoyed by lovers of ripe and rich fruit early, yet will reward the truly patient with a wine of true beauty when left alone to mature for a decade.

Small parcels of fruit from old dry grown vines are selected for their intensity of flavour and individual qualities. Complex and concentrated this classic Barossan will continue to develop for a decade at least.

Graveyard Vineyard is the jewel in the Brokenwood crown, responsible for the company's flagship wines. The vineyard was planted with Shiraz vines in 1970 - extremely heavy clay soils, yields are low, but fruit flavour is intense through employment of meticulous vinification techniques. Strong lifted aromas of sweet earth and dark cherry greet the olfactory senses. Oak features, but will soften and integrate given some patience. Initial flavours of dark chocolate and ripe plums are beautifully lashed to ripe tannins lending an edge of cedar.

Powell & Son Brennecke Seppeltsfield Barossa Valley Grenache Powell & Son (first vintage 2014) is the venture of Barossa Valley legend Dave Powell and his son Callum. This Grenache comes from organically-grown vines that date back to the early 1900s on a site in the north-western corner of the Seppeltsfield sub-district of the Barossa Valley. The Brennecke vineyards dry-grown, untrellised bush vines are anchored in heavy red clay over limestone subsoils. These factors translate to excellent palate structure and a firm tannin backbone in the finished wine. The wine is multi-layered with complex flavours red fruits, cedar, spices, hints of vanilla and cinnamon. The palate typically shows a sleek tannin profile supporting a red-fruited core of cherry and cranberry. Maturation in 100% new French oak barriques also makes a contribution. This is a powerful Grenache style with an opulent feel, ripe, fruit-sweet spice and a long finish. It is concentrated but typically has an appealing underlying freshness.
