A deep ruby wine with vibrant colour, full of ripe opulent dark plums and forest fruit aromas. An earthy note ties into the rich and complex oak structure. These flavours merge together on the palate and are guided by a generous serve of well-rounded tannins, allowing for the balanced palate to extend into a pleasantly lingering finish.

The Barossa is home to some of the world’s oldest ungrafted Shiraz vines. The vines were planted in a pre-mechanized and pre-irrigation era where site selection was everything. Dry grown as bush vines with only the best soils, vine material and sites surviving the first years, and only the absolute pinnacle surviving the 100 years thereafter. The low-yielding ‘Centenarian’ vines, noted for their intensity of flavour, were planted more than a century ago around the time construction of the Château itself began. The select parcels are hand-picked and fermented in small open fermenters with hand plunging four times daily before careful basket pressing to extract tannin and colour. NOSE: Aromas of black cherry, clove spice with hints of red currants and chocolate. Each year, every one of the 1,500 barrels is tasted in the search for the very finest cuvée to represent Ares, the pinnacle of our Shiraz production.

With a strong commitment to the philosophy of ‘quality without compromise’, Two Hands Wines use a strict classification process to ensure that only the best barrels each vintage are deemed worthy of being bottled as a Flagship Series wine. Six months after vintage, a selection of barrels from our best parcels of fruit are carefully assessed by Chief Winemaker Richard Langford, looking for the finest cuvee and given a classification grade associated with its place in the Two Hands portfolio. With this focus on detail, it means only the best barrels make it through and quality is maintained even in the toughest vintages, albeit at lower quantities. Each year, only a handful of barrels come in at the top of the class, scoring an A+; these barrels become wines in our Flagship Series. These ultra-premium wines represent the very finest varietal selections from each vintage.
