A purposely early harvest to highlight a fresh red fruit spectrum, naturally lower alcohol, wild ferments, and the use of larger oak for maturation are just some of the techniques employed to make these beautiful food friendly wines.

S.R.S. stands for Sub Regional Series. Carefully selected individual grape varieties that excel within a certain sub-region. These wines represent the very best varietal wines under the Flametree label and will only be made in the best vintages, volumes will be small and availability very limited. Exceptional in quality, complexity and finesse. It shows all the perfume and structure that make Wilyabrup Cabernet Sauvignon wines so famous. Lifted blackberries, mulberry, plums, earth and dark chocolate dominate the nose and palate at this early stage. Whilst showing plenty of inky dark fruits, violets and bitter chocolate. The palate also displays wonderful fruit and oak tannin, the result of 16 months oak maturation.

This iconic label by Yalumba has a proud history from it's first release in 1962. Quite possibly the quintessential Australian Shiraz Cabernet blend, 'The Sig' shows vibrant Barossa aromas of dark fruit and spice and a concentrated palate that is long and deeply flavoured. Representing the pinnacle of any given vintage, the Deep Woods Reserve Cabernet Sauvignon from the very low yielding original vines on the estate in the Yallingup region of Margaret River and a single growers vineyard in the Yallingup hills. A ¾ tonne bell with the name of 'Angelus' sits proudly atop the cellars at Wirra Wirra and heralds the beginning and end of vintage every year on the famous McLaren Vale estate. Previously the bell rang out from the Jesuit Church in Norwood thrice daily and due to this tradition, Wirra Wirra continue to name the bell and their very best Cabernet Sauvignon every year, The Angelus. Always a pungent and concentrated Cabernet with notes of cassis, cedar and trademark bitter chocolate bound with fine tannins. A propensity to age in the bottle for over a decade as well as its approachability early in life will appeal to all.

Houghton Gladstones Cabernet Sauvignon is a wonderful example of well established wineries in the Western Australian wine scene with access to some amazing vineyards sites within the Margaret River. On show here are marvelous aromas and flavours of bay leaf, black tea and some spicy mocha notes. Excitingly dense on palate with harmonious oak balance and impressive acidity. A brilliant wine.
