Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Made in small numbered batches from hand selected rums from the South Pacific and spiced in Australia with a unique dry spiced flavour. No sugar added. No artificial flavours. Australian Owned. Introducing 36 Short Gin (Pando's suit size), a one of a kind regional spirit made for great times and handcrafted in South Australia. 36 Short Original Gin is perfectly tailored with a balanced range of botanicals, lifted floral notes over a full flavoured back palate that make this Gin the equivalent of a black tie outfit.

Using the distillery's 120 years of rum-making expertise, the master craftsmen have searched our two-year old Bundaberg Rum reserves and selected a vat that was producing a rum with extra special characteristics. This premium rum was then doubled aged for a minimum of four years in our hand-crafted oak vats until it reached its peak.

A secret recipe of adventurous spice & natural flavours that are expertly blended with fine Caribbean rum then aged in charred white oak barrels to create a taste and colour as rich as a pocketful of gold doubloons. Notes of rich natural vanilla, brown sugar, dried fruit, warming spices with hints of oak, come together to create a perfectly balanced spirit with a smooth finish. Best served in a tankard over ice, with cola and a slice of lime.

The choice of botanicals is a starting point for any distiller and its inclusion of fresh strawberries that gives this gin its unique blush pink hue. Featuring complex fruit flavours thanks to the inclusion of fresh strawberries, which are steeped together with an array of other botanicals. Inspired by the Italian classic Caffè Corretto the beautiful union of espresso coffee with a serve of glorious Grappa. Syrupy-sweet espresso flavours complimented by dark cocoa Tiramisù.

Our classic Dry Gin is juniper forward, lightly spiced with coriander and pepper berry. The fennel links the softer notes of the cinnamon, angelica and orange to give this gin a great mouth feel. Enjoy in a classic G & T or on ice.

Our Navy Gin is bold yet balanced, full flavoured and complex Gin based on similar botanicals as our Dry Gin with a few little tweaks. This fuller flavour Gin will bring to life any cocktail with its Navy Strength complexity, but can be enjoyed simply over ice as a sipping Gin.
