A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. A gentler, more feminine and food friendly expression that Islay lovers should get to know. Despite being the largest distillery on Islay (in terms of production anyway), nearly all of Caol Ila's output ends up in blends, so much so that until 2002 when the 12-year-old was released, independent bottlings were the only recourse for malt hunters. The distillery's gently fruity-smoky style sets it apart and comes down to the production process: "...although it receives the same spec of malt as sister distillery Lagavulin, Caol Ila’s distillation regime – longer fermentation, higher cut point, taller stills, helps to reduce the heavy phenols." One by one, The Last Great Malts of Scotland will leave their distillery gates. Deemed the bad boy of Speyside, Craigellachie is an unapologetically unique and challenging Single Malt. This is a complex dram, packed with flavour and texture. 13 Years Old, from an 1891 distillery. Bottled at a punchy 46% ABV. A stubborn, sulphurous single malt, condensed in rusted worm tubs on an inhospitable rocky bluff.

Santisima Trinidad 15 Year Old Rum is the result of three stages of ageing. Firstly, liquors are aged for at least 4 years before being blended into the base rums. Base rums are distilled from cane sugar and ages for 3, 7 or 25 years. This new 15-year-old rum is further barrel aged, rounding out the profile.Dark amber in appearance with aged, Santisima 15 Year Old has woody notes, toasty nuances and dried fruit aromas. The flavour is long, combining sweetness and a slight bitterness well integrated with almond and walnut flavours.

Chivas Regal 18 Year Old has been created by using whiskies matured for at least 18 years which has resulted in this very special Whisky. Exceptional richness with aromas of buttery toffee, dark chocolate and dried fruit. Hints of spices and smoke combine to produce a long, warm finish.

Ardbeg 10 Year Old Single Malt is typical Islay (eye-la). Light gold colour with exceptional balance and depth on the nose. The aroma is a beguiling mix of toffee and chocolate sweetness, cinnamon spice, Fresh citrus and floral notes of white wine are evident, as are melon, pear drops and a gentle creaminess. There is also fresh phenolics of seaspray and smoked fish. Hickory and coffee emerge on the finish.

The richly layered Glenfiddich 15 Year Old single malt Scotch whisky is innovatively matured in three types of oak cask: sherry, bourbon and new oak, before being married in a handcrafted Solera vat that is never emptied, but is always kept at least half full creating a deliciously harmonious and intense whisky.
