Volcan De Mi Tierra Anejo Cristalino Tequila

A new entrant into the Tequila market comes from a joint venture between Moët Hennessy and the Gallardo family. Using only lowland Blue Weber agaves, production is overseen by Master Distiller, Anna María Romero Mena. 'Cristalinos' are the latest trend in premium tequila. They're matured in American oak, then charcoal filtered to remove any colour. The result looks like a Blanco but tastes and smells like a Reposado. Volcan De Mi Tierra's expression is a blend of anejo and extra anejo tequilas aged for four months with different cask finishes, including whisky and cognac.

La Dama Reposado Tequila

38% Abv, 750mL La Dama is the largest sustainable blue agave grower in the world. This Reposado Tequila is made from 100% agave, Aged 3 months, organically grown in the highlands of Los Altos. Each artisanal, diamond-shaped bottle is created from “useless, forgotten scraps” of recycled glass. Each Special Edition Gift Box is made from the exhausted agave fibre left over from Tequila production. What was seen as wastage, is given a new, beautiful life. La Dama is committed to aiding the local community: paying the highest industry wages, and donating educational resources to local schools with each bottle sold.

The journey of 818 Tequila begins with the skilled jimadores, local agave farmers from the Tequila region. These experts identify the optimal conditions for growing agaves in the Los Valles region, patiently waiting for at least 7 years until the agaves reach peak maturity. Once harvested, the agaves undergo a slow cooking process that lasts for over 30 hours. Large stone Tahonas, weighing 800 kilograms each, are then utilized to crush the cooked agaves. This age-old technique allows for the extraction and collection of the juice, preserving the authenticity and tradition of tequila production. The extracted juice, known as "mosto," then goes through a natural fermentation process. Unique wood and stainless steel tanks are utilized, and the fermentation is enriched by using leftover agave fibers from the tahonas. Native yeast is added to enhance the aromatic expression, resulting in a deeper and more nuanced flavor profile. The tequila is distilled in hand-built copper alembic pot stills of the highest quality. It undergoes a double distillation process, carefully monitoring the alcohol volume to achieve the desired smoothness that 818 Tequila is known for. Domingo Mezcal Especial Espadin Oaxaca

Mezcal Legendario Domingo was founded in 2012 by Julian Saenger. Born and raised in Mexico, Julian has always had tremendous love and respect for the art of mezcal production, often finding ways to delve into production, marketing, brand launches and general support of the category throughout Mexico. When he finally found the opportunity to create a brand of his own through partnership with the Velasco family, he chose to centre the brand design around a recurring feeling he experienced through his journey in mezcal: celebration. Through its various labels, designed in Papel Picado, Legendario Domingo highlights different mezcal producing regions of Mexico, demonstrating exemplary distillation tradition from each region and emphasizing the differences in terroir. The mezcals Legendario Domingo produces are Palenque and regional designates (similar to vineyard designates in wine), purposefully emphasizing each region by accenting the terroir and capturing the agave varietal character, aromas, flavours and mouthfeel that wild fermentation and artisanal production afford. This Mezcal is made from 100% Cultivated Maguey Espadín (Agave Angustifolia) harvested at 8-9 years old from San Luis del Rio, in the Oaxaca region by Maestro Mezcalero Familia Colon. The piña is cooked for 4-5 days in underground conical ovens ignited with Tepehuaje (Lead Tree) and sabino wood, both woods endemic to this region. Not a single tree is cut down, as all wood is gathered from fallen, dead trees. The roasted piña are then crushed by a Tahona mill, Chilean stone pulled by horse, method to crush the agave after cooking. Fermentation takes place in open underground wooden vats with fresh spring water for 10 days. No yeast is added, and instead indigenous yeast from the air ferments the agave juice. The mezcal is then double-distilled in a 300 litre Arabic Alembic pot still. The mezcal is then rested 30-45 days prior to being bottled. Each bottle is then filled, labelled and boxed by hand, completing the artisanal process from field to bottle. This Espadin has fresh citrus flavours with a hint of minerality, followed by a mild taste of smokiness and ripe Oaxacan fruits.

About 10 years have passed since the blue agaves in this tequila first stretched their leaves towards the hot Mexican sun, can you imagine? An agave must grow for 8 to 10 years before it can be harvested for tequila production. This is followed by the cooking process and then fermentation, which in turn takes several days. This tequila then matures in carefully selected bourbon oak barrels for at least 8 months. The most important ingredient in our tequila is undoubtedly time.
