Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. The fruit for this Onannon Mornington Pinot Gris was handpicked and pressed immediately into the tank. It is then settled overnight and racked to both tank and old barrels. A cool fermentation took place over two months during which the wine was stirred regularly to increase texture. Resulting in wine with great aromas such as ripe pears, mixed stone fruits with hints of cooked green apple in the background. It then leads to a full flavoured, textured palate with a delightful finish.

Very light straw in colour, this Pinot Gris delights with an ever so slight bronze hue. Notes of orange blossom and honey due can be seen with hints of toasted nougat.The front palate is bright and lively with a soft lime citrus line providing zest and vibrancy. Gentle phenolics hold the mid palate allowing for subtle oak flavours to linger. The slight level of residual sugar balances the acid on the finish wonderfully and leaves you looking for the next sip.

Mike Alyward has made a bit of a habit of crafting one of our most sought after Pinot Gris in recent times and the current vintage rates as one of his finest. It has a delicious mouth-filling texture, courtesy of some lees aging in old barriques and seamlessly combines fresh floral and pear notes with hints of honeyed complexity.

This is named after the aromatic compounds stored in the skins of Moscato Giallo. This is a blend of Friulano (45%), Riesling (26%), Moscato Giallo (19%) and Malvasia Istriana (7%), all from Quealys Balnarring home block. The grapes were added to a rolling ferment (as they were harvested) to open-top amphorae, and the wine spent six months on skins. It was then basket-pressed, roughly settled and allowed to mature in old French puncheons before being bottled 12 months later.
