It’s a cloudy style prosecco and up there with one of our favourite ways of drinking the variety. It offers up more character and depth than the modern classic prosecco, but is still light, fun and easy drinking. Think dry, cloudy, sourdough and lemon curd. Grown by us and made by Gabe using the traditional champagne method, col fondo is fermented in the bottle itself. It’s aged on its lees for 18 months before release, giving it that classic sourdough-like aroma you get from slowly made sparkling. Although it has complexity with age, it has loads of vibrancy and freshness with delicate aromatics. Part of the magic in the slow process, is the fine bubble it produces, along with a great balance between natural acidity and a creamy palate. The dry, savoury edge also makes it a standout for food pairing.

Single Vineyard high altitude Chardonnay from the King Valley is harvested in the early morning cool hours and pressed immediately to maximise the vineyards flavour. Full rich aromas of lemon and peach and gentle oak. The complexity of this Chardonnay is the result of partial barrel fermentation in new, French oak barriques, followed by stirring of the yeast lees for several months. Bursting with white peach, lychee and melon, the crisp finish and length of flavour define this wine.
