Centred around 3 vineyards that are approximately 10 minutes by tractor apart, the winery is now synonymous with terroir driven wines perfectly suited to Mornington Peninsula. Their estate Chardonnay is a wonderful modern interpretation of the variety with layers of complexity and fruit weight balanced by the ever present acid line that runs through the core of this fantastic wine.

The Gimblett Gravels Chardonnay is made using very traditional winemaking techniques involving wild yeasts and the use of French oak barriques. The resulting wine is always finely flavoured and softly textured with a linear elegance that allows the wine to retain its freshness. Lovely aromatics of white flowers, peach, biscuit and flint. Integrated fresh flavours of stone fruits, lemon zest and roasted nuts create a generous and complex feel across the palate which is elegant and long on the finish.

The bouquet is an enticing mix of white field flowers, grapefruit, pear essence and brioche. Enriched with layers of nougat and nut-meal, the palate's fine, creamy texture is supported by toasted vanillin oak. From families which have been wine growers for 7 generations, Andrée and René Thibert created their own domaine in the heart of the village of Fuissé in 1967. Inspired and encouraged by their parents, Sandrine and Christophe have now taken over the management of the domaine which covers 29 hectares. The vineyards are sustainably managed to respect the soils and the vine plants. Intense bouquet, delicate, charming, with notes of citrus and flowers. The wine has all the typical opulence and elegance of a Saint-Véran, with a back taste of fresh citrus and fine minerality.

Very fine persistent bead. Straw coloured and vibrant, fresh hue. Fruit aromas of pear flesh and grilled grapefruit intermingle with brioches and freshly baked sourdough. Light toasty elements and slight yoghurt notes add complexity and depth. The palate is creamy and textural with delicate web of acidity interwoven throughout. Cream, yeast, granny smooth apples and butter pastry flavours flow along before finishing with a preserved lemon-like tang.
