High up in the Adelaide Hills, Paracombe is owned and operated by the Drogemuller family, which it has passionately done since 1983. Sourced from both estate and selected grower fruit, Paracombe Shiraz shows wonderful ripe fruit aromas with a delicate cool-climate aspect. Notes of cherries, plums, pepper and spice are notable along with a palate of layered spicy fruit and a fine tannin structure.

Occupying some of the more elevated land in the Canberra District, Quarry Hill produces a Shiraz with ripe flavours and excellent natural acids; the hallmarks of great cool-climate Shiraz. Aged in a mix of new and older French oak, the wine is bright purple in the glass, follwed by aromas of raspberry, plum, spice and a little pepper. Through the palate, there are flavours of mulberry and plum, fine tannins and a crisp, dry finish.

Steve Maglieri's Serafino Sorrento Shiraz, is one the most flavourful McLaren Shiraz's we've seen for quite some time. Spicy and rich on the front palate that then leads to a supreme density consisting of ripe plums and blackcurrants. The Stonehorse wines are vinified to make styles that emphasise fruit characteristics with complementary barrel maturation. The oak is designed to support and add structure to the palate without compromising the drink ability of the wine. A full bodied wine with a supple mouth feel, dark berry characters, spice box and liquorice mingle on the palate.

Smooth and refined this Shiraz shows intense plum berry and liquorice flavours. Enhanced by maturation in quality oak this is a wine to enjoy now or cellar medium term.

Deep crimson red with a perfumed nose of dark fruits, spice and white pepper. The palate fills with ripe black fruits, blueberries, plums and finishes with silky smooth tannins.

Sparkling shiraz is as Australian as anything, and one of the best value is from Seppelt, with the current vintage drinking superbly. Surprisingly soft and plump with ripe and giving tannins; while it's dry, there's some sweet fruit sensation on the palate that helps with dishes that have heat spikes and spice, especially Indian. Lots of plum fruit, spice and earthy notes, too, with fine acid and the fizz hit offers a refreshing lift.
