The first ever release of Sullivans Cove XO Double Cask Brandy is a marriage of ten different casks, each selected for their individual flavour profiles to create a uniquely Tasmanian spirit much more than the sum of its parts. Each brandy in this batch was aged for between nine and ten years in various French Oak ex-tawny and American oak ex-Bourbon casks, distilled from a wide variety of Tasmanian wines including chardonnay, pinot noir, gewurztraminer, sauvignon blanc, cabernet sauvignon and merlot to achieve incredible complexity. Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. This whisky displays rich luxurious amber colour, sweet honey and spice on the nose. Complex sherry, port and vanilla on the palate. Perfect for celebrating births, weddings, wakes and anything in between.

Pepper famed bourbon distiller, who then introduced it to New York high society during his frequent visits to the Waldorf-Astoria Hotel bar in New York. They clearly embraced it, given how the infamous Mad Men had such a taste for it 80 years later in the 1960s Manhattan advertising scene. The Old Fashioned has had a makeover or two over its time. But this smooth, bitter, sweet simplicity of Bulleit Straight Bourbon Whiskey, traditional Angostura Bitters, and sugar cane syrup is a tonic that Don Draper himself would approve of.Serving Suggestions:Serve Dr Onyx Old Fashioned gently swirled in a short glass over ice, with a twist of orange zest.
