New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Japanese whisky is not only Suntory or Nikka, there are many other less known distilleries whose reputation continues to grow. And for this new tasting, They choose a blended malt, the White Oak Tokinoka blended malt. The White Oak distillery, located in the city of Akashi (Hyogo Prefecture), was the first to obtain a license for distilling whisky in 1919. Built in 1888 for the production of sake and shochu, at the beginning the distillery produced only blend whisky in a traditional way and specially reserved for the domestic market. Then the site was modified in 1984 to start producing whisky in bigger quantities. The Eigashima Shuzo Company owner of the distillery, produced since 2007 several single malts named Akashi.

Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. This whisky displays rich luxurious amber colour, sweet honey and spice on the nose. Complex sherry, port and vanilla on the palate. Sasanokawa Shuzo Co. Ltd was founded in 1765 and started producing whisky in 1946. The Yamazakura is a ji-whisky made by Sasanokawa Shuzo Co.This particular Black Label bottle is a new Yamazakura product that was released in 2015. Smooth after taste is refreshing with a hint of sweetness. Enjoyable both on the rocks or neat.

Ardbeg 10 Year Old Single Malt is typical Islay (eye-la). Light gold colour with exceptional balance and depth on the nose. The aroma is a beguiling mix of toffee and chocolate sweetness, cinnamon spice, Fresh citrus and floral notes of white wine are evident, as are melon, pear drops and a gentle creaminess. There is also fresh phenolics of seaspray and smoked fish. Hickory and coffee emerge on the finish.

With a wholemeal and honey quality to the nose and the odd smoky tangent. A sweet, fruity core and a long round finish. Dalwhinnie has a little bit of everything, peat, honey and backbone. A classic malt for everyone.
