The cooler climate in Tasmania has always been an ideal place for Pinot Noir to grow as this variety requires longer ripening periods. Chardonnay on the other hand just thrive the extra time to develop more elegant floral, crisp green apple, citrus flavour and natural acidity. When these two join forces, they become the classic base blend ideal for Sparkling wine. This is well balanced with a dry, refreshing finish.

Deep Woods Hillside Chardonnay exhibits lifted nectarine and white blossom characters. A suggestion of cedar like oak frames the generous stone fruit characters and complex chipped shell minerality. The palate is clean and lively with tremendous depth of ripe stone-fruit flavour nuanced by cashew notes. Devil's Lair The Hidden Cave collection was created to showcase the daring and innovative approach to Margaret River winemaking. Oliver Crawford hits the mark beautifully with this Chardonnay that is bursting with Granny Smith apple aromas. In the mouth the wine is a cascading behemoth of white peach and rich nougat.

Yering Station, located in the heart of the Yarra Valley, is home to some of Australia's greatest Chardonnay. Their Little Yering Chardonnay provides all the complex aromas and flavours you expect from the artisans from the Melba Highway, but with a price tag that more than friendly. Toasted almonds, lemon/lime notes and a clean, lingering acid that provides an effortless length of flavour.
