Hay Shed Hill Vineyard Series Sauvignon Blanc Semillon
The wine displays fresh green tinges to a very pale straw colour. Typical cool-climate Sauvignon Blanc and Semillon aromas of lively tropical fruits and fresh herbaceous grassy characters make up an intense bouquet. The palate is fresh and lively with classic Sauvignon Blanc and Semillon characters and a fine structure that are an indication both of the quality of the vintage and the use of only free-run juice. The Hay Shed Hill vineyard is situated on a picturesque property that was established as a group settlement farm for returned soldiers from the First World War. Known as Sussex Vale the property was originally a dairy farm. The current homestead, considerably renovated, still has much of the original Group Settlement look and feel. Vines were first planted in the early 1970s. In the late 1980s the vineyard was bought by the Morrison Family and the wine brand Hay Shed Hill was established taking its name from the local reference to the hay shed located on the property. The sister label, Pitchfork, was developed to complement the single vineyard Hay Shed Hill label. A series of ownership changes saw numerous alterations to labels, wine style and distribution until the current group of partners bought back the farm and the brand in late 2006 and returned to the original concept of producing wine with integrity that expresses the quality of the site.

The palate is vibrant and fresh with a lovely concentration of tropical and subtle tropical flavours. The wine finishes with persistence and a lingering attractive textural flavour.

Grape variety - 100% Sauvignon Blanc. Oak maturation - None. Colour - Pale straw-green. Aroma - Pungent Sauvignon Blanc characters of lychee, goosebery, passionfruit and lime along with roasted red capsicum and cut grass. Palate - Full and textured with balanced acidity. There are fruit characters of lychee, goosebery and lime with freshly cut grass. A light and fruit driven wine with great drinkability. Viticulture - Fruit is sourced from neighbouring properties in the northern Yallingup sub-region of Margaret River. Direct input from Forester’s viticulturist ensures well balanced canopies and crops are grown for the ripe style desired. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Winemaking - Modern white winemaking techniques are employed in the production of the Lifestyle Sauvignon Blanc, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. The clarified juice is then racked to a fermentation tank. A range of specially selected yeasts are employed on different parcels of fruit and the resulting dry tanks of wine are carefully blended to maintain the Forester Style. Storage and Bottling - Bottled under screwcap into a burgundy bottle.

The wine finishes long and clean with lingering herbaceous characters and mineral acidity.
