Brilliant very pale straw colour with greenish tinged edges and a watery hue. Elevated pear and red apple aromas intermix with hints of honeysuckle and lime. Delicious juicy pear and red apple fruits drive the mouth watering palate with some delicate infusions of fresh herbs lying underneath. Melded purple and quite deep. Righteously rustic. Dark and red berry fruits with a savoury and green herbal edge. Violet flowers, aniseed, bay leaf and star anise. Naturally fermented from Australian honey, Daringa Mead possesses an intense aroma of honeycomb and wax, like birthday candles. The palate is unctuous and flavour-rich. This is a big, sticky, spicy old-school mead.
