Domaine du Roc Des Boutires En Bertilionne , Pouilly-Fuissé The fruit is sourced exclusively from En Bertilionne, located in the southern end of Burgundy. 0.57 hectares of limestone with shoals of marl, very deep chalk. The old vines (35-years), or vielles vignes, of Chardonnay are planted at an altitude of between 250 and 500 meters, which is quite high compared to other AOC Burgundies. The result is mature, well-positioned vines producing fruit that creates wines of complexity and freshness.

Domaine Du Roc Des Boutires Roc des Boutires

The grapes for this wine were grown on clay and limestone soils in the south of Burgundy. The old-vine vineyards here, planted in the late 1950s, are elevated at between 250m and 500m and provide this wine with both maturity and freshness. The grapes are hand-picked and gravity processed as whole bunches before cold (8°C) fermentation. Most of the wine (60%) is aged on lees in second and older-use oak barrels (Allier) for 15 months with some lees-stirring. 'This is high-end Pouilly-Fuissé, and the vineyards, which total 4.2 hectares, are ideally situated in the shadow of Roche du Solutre. The domaine was purchased in 2017 by the Parinet family of Château du Moulin-à-Vent. (The wines) are very fine expressions of white Burgundy, with lovely texture and mouthfeel.' Aged in 40% new French oak, this classic white wine combines intense opulence with finesse & textural flintiness.

Simonnet-Febvre Chablis Premier Cru Vaillons

Pristine concentration and complexity of favour are the hallmarks of Simmonet-Febvre, a revered maker in Chablis. Stonefruits and ruby grapefruit with grilled nuts, owing no doubt to Simmonet-Febvre's insistence on ageing their Premier-Cru wines on lees for over a year. Has all the zippy-freshness you would expect from a high-level Chablis.

Felton Road Bannockburn Chardonnay

This winery retains its cult status by continually producing wines of poise, class and adhering to strict biodynamic principals. The Bannockburn Chardonnay is at this stage pert and linear, with floral and citrus notes. It will take a little time for this little gem to begin to give up its secrets.
