Seductive from the first sniff. Certainly got me interested. Remarkably soft and supple Cabernet with almost cashmere fine tannins and an effortlessly smooth and long palate structure. Slightly chalky tannins add some balance and the follow though to the finish is extravagant and stylish.

The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. The Capel Vale Single Vineyard Scholar Cabernet Sauvignon 2017 boasts a deep, ruby red colour with a hint of purple. Aromas of blackberry, blueberry and cassis blend harmoniously with touches of spice and leather. On the palate, the wine is full-bodied and intense, with a good balance between its firm yet supple tannins and juicy acidity. Notes of blackcurrant, plum and star anise mingle with hints of tobacco and black pepper. This elegant Margaret River Cabernet is a highly enjoyable and complex drop that is sure to linger long on the palate.

Each parcel is fermented separately before undergoing extended maceration to build depth and complexity. The wine then matures in French oak barriques, with a careful balance of new and seasoned barrels, allowing the character of the site to shine. Cornerstone Cabernet consistently offers aromas of blackcurrant, plum, and dried herbs, alongside subtle cedar and tobacco notes from its time in oak.
