Direct pressing in pneumatic press, then careful settling. Fermentation at strictly temperature controlled. The wine is aged eightmonths in cask with regular stirring. Bright straw yellow in colour. The nose opens with mineral and buttery notes. Slight notes of white flowers as the palate becomes quite round with notes of spiced brioche.
