Capel Vale is family-owned and one of the pioneers of the West Australian wine industry, first planting vines in 1974. And the duck? Intensely aromatic, showing white flowers, jasmine and fragrant lime. Tightly wound acidity underpins an incredible purity of fruit with fresh finger lime and lemon curd notes. Fine phenolic structure and wet stone minerality provide drive and a crisp, dry finish with great length.

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. All Cullen Wines are grown on a certified Biodynamic, Carbon Neutral and naturally powered estate. Grapes are harvested by hand on fruit and flower days according to the astrological calendar. The wines have no additions of yeast, acid or malolactic culture, and are in this sense natural wines which express the place and land on which they are grown, the vintage and the people.

Green apple, apricot, green pear, lemon myrtle and honey, a coverlet of spicy oak. It's juicy, lots of flavour here, but tight too, and the texture is excellent offering some chalky grip and glossy feel, and it sports a cinch of dried herb and quinine bitterness on a long finish.
