All Cullen Wines are grown on a certified Biodynamic, Carbon Neutral and naturally powered estate. Grapes are harvested by hand on fruit and flower days according to the astrological calendar. The wines have no additions of yeast, acid or malolactic culture, and are in this sense natural wines which express the place and land on which they are grown, the vintage and the people.

Our philosophy has always been to give our wines time to age in the bottle before release, a rarity in today’s market. Enjoying wines when they are ready to drink, rather than straight after bottling, is the reason Umamu wines have developed such a pleasant and sophisticated texture. 2008 is just glorious on its own or with food. Winemaker notes Colour: Pale Gold Bouquet: Our Reserve Chardonnay has a bright and lifted nose of sweet pastry, lemon curd and fleshy white stonefruit. Palate: The palate displays a rich and layered mix of fresh stonefruit, citrus and intense vanilla bean flavours. A fine mineral thread ensures a wine of length and persistence. Viticulture The vineyard is planted on Karri loam gravel soils with underlying laterite. Vine rows run north south down a moderate north facing slope and are clone Gin-Gin with trellis structured to vertical shoot positioning. The vineyard is subject to the cool Southern Ocean breezes and ripens slowly, evenly and with naturally high acidity. Winemaking The fruit is handpicked then cooled before whole bunch pressing. New and seasoned barrels are filled directly from the press to enhance complexity. Only the free run fraction is reserved with harder pressings separated to ensure a delicate and fine expression of the fruit in this wine. The juice is left to ferment spontaneously and can take up to three weeks to ferment with some cooling at the height of ferment. After ferment the barrels are topped and gently stirred with inert gas protection monthly. A small number of barrels were encouraged to finish malolactic fermentation to ameliorate the natural acidity. After nine months in barrel the wine is assembled in tank and aged on lees to further encourage complexity.

The Cullen Metricup Chardonnay is a fresh and elegant expression from Margaret River, crafted with a minimalist, natural approach. The Chardonnay is from the Metricup area, and comes with authentic sustainable credentials from a certified organic vineyard in conversion to biodynamic.

This Margaret River classic has reached a beautifully rounded maturity, softening its initial power into pure elegance. The vibrant grapefruit and white stonefruit flavors have mellowed into a smooth, honeyed richness, perfectly complemented by a creamy cashew finish. It is silkier and more approachable than ever, a sophisticated, world-class white that feels luxurious and easy to drink right now.

Margaret River makes some of Australias best Chardonnay and while its home to big names, we think Domaine Naturaliste, a smaller operator, is just as great, so were thrilled to share this with you. In the glass: Bright yellow, green highlights. On the nose: Nectarine, pineapple and lime with deluxe barrel notes.On the palate: Velvety with wonderful harmony and oyster shell and sea spray brightness. Lime juice-like acidity drives the intense yet refined fruit core with complex nuances of nougat and struck match.

The palate exudes fleshy primary fruits, layered with nutmeal, lemon butter and brioche. A chalky, mineral texture and fresh citrus acidity continues the bounce.

Flametree are nestled in the picturesque Margaret River wine region where they continue to be surrounded by a buzz and excitement centred on the quality wine they are producing. Attention to detail is paramount in the winery where careful site, clonal and oak selections are made to produce exceptional Chardonnay's like this one. Characters of dried pears, grapefruit, melon and fig are balanced with searing acidity and a length of flavour that speaks to its promising future.

Capel Vale is family-owned and one of the pioneers of the West Australian wine industry, first planting vines in 1974. And the duck? A symbol of the native mountain ducks that inhabit the nearby Capel River. In the glass: Pale with green freshness.On the nose: Rich and nutty aromas with stonefruit, citrus and struck match. On the palate: Full and generous with complex development under juicy peach and tangy grapefruit. Lovely line and length due to precise acidity, and well-judged oak.
