Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. We've left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mount Gay Eclipse Rum is widely recognised as the oldest rum in the world. Eclipse has a brilliant golden amber colour and a luxuriously complex aroma. Aged in charred, American oak barrels for a minimum of two years, producing a rum with flavours of apricot, banana and vanilla. The barrel ageing gives the Rum a lightly smoked character and a long lasting finish. Eclipse has a warm, medium body with a bright finish. Its subtle smokiness is imparted by the toasted Kentucky oak barrels in which the rum is aged.

Local, sustainably sourced molasses is blended with our unique water. Artisan distillers hand make the wash and double distil it. Before the premium spirit is aged in oak casks, we bottle a very limited quantity for you to enjoy in cocktails and mixed drinks.
