This six-malt mash bill, although incredibly low yielding, provides a rich and expressive flavour, full of distinct regional character.Matured predominantly in 100, 200 and 300-litre Australian Apera (Sherry) casks, complemented by a selection of Ex-Bourbon and Archie Roses own 36-month air dried Ex-Rye Casks, each coopered with a specific balance of both char and toast.The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Hobart Whisky Signature is a marriage of small carefully selected American oak ex-bourbon casks. A satisfying light ex-bourbon cask single malt that delights with a solid malty foundation, some gentle spice and a long, complex finish. Tasting Notes: Nose Freshly baked apple pie with cinnamon, raisins, sweet crust pastry and vanilla custard. Palate Marzipan icing with hints of vanilla bean over malty and clean oak foundations. “I really thought I had an original idea, alas, no. Saffron gin has been done before in France. I think the Brocken Specter Summer Gin is the first Australian saffron gin we use 100% Tasmanian grown saffron and never add any coloring. For the base we combine 16 aromatics including juniper, coriander seed, lemon myrtle, strawberry gum, star anise and vanilla bean. This mix is added to a grape based spirit and left over night. This spirit/aromatic base re-distilled, after at full strength we add the saffron. After a few days the saffron stamens are completely white and simply strained out. The gin is gluten free, vegan and unfiltered. Try a summer gin with good tonic, fresh chilies and thyme!”

Our peated grain is sourced from Bairds Maltings in Scotland – renowned for supplying many of the peated whisky distillery icons. This release represents our passion to continuously craft world class peated single malt whiskies of incredible distinction and quality. A gently, but distinctly peated whisky with a blended mash bill of unpeated Tasmanian malted barley and traditionally peated malt, aged for seven years in first fill American Oak ex-Bourbon casks. A “gateway” peated single malt - luring in many who, until trying it, thought they did not like peated whisky.

Distilled in Melbourne. Brogans Royal Blood Gin is the savoury sensation that is her navy strength gin. Something a bit special, complex with a lingering cardamom heat, at 57.2% it has a bit of a kick. Herbal aromas and flavours from the rosemary and bay leaf are seasoned with Australian sea parsley, saltbush and roasted wattle seed giving plenty of good mouthfeel. Tasting Note Juniper forward, dry, slightly citrus, and extremely savoury. With herbal and aromatic characters of fresh vapour distilled rosemary leaf, supported by bay leaf, olive leaf and black peppercorns, that are amplified by the Australian natives of spicy mountain pepper leaf, fragrant and savoury salt bush and salty sea parsley. A bold amount of roasted native wattle seeds lengthens the finish and exaggerates the heat of green cardamom. A winner in a dry Martini and a Dirty G&T with a slice of apple to garnish.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.
