From some of the earliest plantings of Shiraz in the Yarra Valley with vines dating back to 1969. Applejack Vineyard was planted by highly respected viticulturist Ray Guerin and is managed by his son Mark. This vineyard is situated in the Upper Yarra Valley to the south east of the traditional valley floor. The higher altitudes result in cooler growing conditions, despite the westerly aspect. The distinctive dark-red volcanic loam soil is a distinguishing feature of the vineyard. Applejack Vineyard is located on a dramatic slope and is close planted and meticulously managed. Hunting Hill is situated on the hillside just opposite the winery and produces beautifully floral and perfumed Chardonnay with a distinctly liner and long palate.

From the famed premier cru site of Cote de Lechet, this boasts an ultra elegant nose of citrus zest blossom, oyster shell, warm stone and lemon zest. A fantastic old school style of Chablis that also offers fantastic value for money for a wine at this quality level.

A unique blend of six Portuguese varieties, Touriga Nacional Tinta Cao, Tinta Amarela, Alvarelhao, Roriz and Sousao, all planted in a natural amphitheatre at the highest and most southerly point of the Yarra Yering vineyard.

The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

Compelling and convincing, with florals, currants and blackberries, not too sweet; it has a savoury edge, with the oak seamlessly integrated. Perfectly ripe tannins with poise and presence ensure that this is lovely now, but will be more so in years to come.
