The 2014 Cuvee d'Elevage Cabernet is an outstanding expression of a northern Margaret River Cabernet. Only the best fruit parcels combined with finest French oak lead to a perfumed bouquet of Cassis, ripe berries and cedar. The complex palate shows ripe and silky tannins, pure fruit intensity with red berries and cassis. Its finely structured with long lasting finish of cigar box and vanilla. Drink now or until 2028.

The Gimblett Gravels Chardonnay is made using very traditional winemaking techniques involving wild yeasts and the use of French oak barriques. The resulting wine is always finely flavoured and softly textured with a linear elegance that allows the wine to retain its freshness. Lovely aromatics of white flowers, peach, biscuit and flint. Integrated fresh flavours of stone fruits, lemon zest and roasted nuts create a generous and complex feel across the palate which is elegant and long on the finish.

Winemaker notes Colour: Pale Gold Bouquet: Our Reserve Chardonnay has a bright and lifted nose of sweet pastry, lemon curd and fleshy white stonefruit. Palate: The palate displays a rich and layered mix of fresh stonefruit, citrus and intense vanilla bean flavours. A fine mineral thread ensures a wine of length and persistence. Viticulture The vineyard is planted on Karri loam gravel soils with underlying laterite. Vine rows run north south down a moderate north facing slope and are clone Gin-Gin with trellis structured to vertical shoot positioning. The vineyard is subject to the cool Southern Ocean breezes and ripens slowly, evenly and with naturally high acidity. Winemaking The fruit is handpicked then cooled before whole bunch pressing. New and seasoned barrels are filled directly from the press to enhance complexity. Only the free run fraction is reserved with harder pressings separated to ensure a delicate and fine expression of the fruit in this wine. The juice is left to ferment spontaneously and can take up to three weeks to ferment with some cooling at the height of ferment. After ferment the barrels are topped and gently stirred with inert gas protection monthly. A small number of barrels were encouraged to finish malolactic fermentation to ameliorate the natural acidity. After nine months in barrel the wine is assembled in tank and aged on lees to further encourage complexity.

Subtle notes of roasted hazelnut and nougat are intertwined creating a layered and complex wine with great purity. The palate is classic powerful Margaret River, white stone fruit dominates the palate with a vibrant core of citrus and pink grapefruit pith. Delicate use of oak and gentle lees stirring adds a subtle creaminess that overlays a textural and richly flavoured wine. Devils Lair 2017 Chardonnay was hand harvested in early March from selected south easterly facing blocks at the Devils Lair Vineyard. A cool fermentation in French oak barrels was followed by occasional stirring on lees for 9 months. A wine of great vibrancy, layers and flavour. With decades of Western Australian winemaking and selling history behind David and Murray the wines being produced are of utmost purity and subtlety. The Burnside Chardonnay is a relative recent addition to the range and is a funky, wild little number with attractive stone fruit characters that are balanced by a beautiful natural acidity.
