Precision, strength and freshness are words that form the signature of Brocard's winemaking philosophy. The domain is among the most important of Chablis. Brocard wines represent the higher end of expression at each quality level. The Chablis Grand Cru Valmur forms a valley which offers subtle variations in terms of exposure: one part faces northwest and the other the south. With a well-balanced mineral character, the Valmur is imposing through its strength and surprising fruitiness. The wine comprises of 100% Grand Cru chardonnay, aged in old French oak for 14 months. A multitude of flavours can be discovered, including lemon, pepper, brioche, licorice and toast with mineral strength underpinning all.

Many of us wine drinkers have a soft spot for Chablis. Its with great reason too, given our climate and affi nity with seafood. A little over two months ago, we were thrilled when this wine hit our shores for the first time following a selective buying trip. Once again, it showcased its undisputed quality and notoriety in our tasting sessions. Established in 1850, this small family owned domain is the proven choice of so many when it comes to great Chablis. The estate comprises a mere 45 hectares of vines scattered throughout the region, grown on the famous Kimmeridgian limestone soils. Textbook in expression and style, super fi ne and elegant, this 2013 has perfectly poised, piercing acidity. This drives superb length of flavour on the featherweight light palate. The wine shows an amazing length of flavor and mouthfeel with strong, clean acid on the finish and some secondary characters derived from the slight solids ferment. A great example of Hunter chardonnay with its the citrus/acid backbone, which is a benefit of no malolactic fermentation.

Set in the township of Beine, Ligneau is a Premier Cru-classified wine of Chablis. Typically Vau Lignau is extremely energetic, tonic, fine and elegant, its freshness is a reflection of its difficult and windy terroir, with structured minerality and a very elegant finish. The 2019 vintage is a wonderful vintage and a great example of Ligneau it is slightly softer acidity and more approachable when young offers good value for money at its best with a pronounced mineral character that enhances the fruit and fine vegetal flavours.

Entirely sourced from Tyrrell's famous HVD vineyard. These dry grown blocks were planted in 1984 and 2003 and together they produce a modern style that has both richness and finesse.

The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food.
