High West is Utahs first distillery since 1870 and the worlds only ski-in gastro distillery. Hand-numbered labels adorn hand-blown glass bottles with wooden-topped cork stoppers. High West Rendezvous Rye is a marriage of two straight rye whiskies: an exotic 6-year-old with a 95% rye and 5% barley malt mash bill, and a very rare 16-year-old with an 80% rye, 10% corn, 10% barley mash bill.

This bourbon is a unique marriage of Wild Turkey 6 to and 12-year-olod stocks, which give the whiskey a rich exceptional flavour that is remarkably smooth considering its high alcohol content.

Bushmills Single Malt Whiskey 16 year old is aged for 16 years in a combination of Oloroso Sherry and Bourbon-seasoned casks, then matured for several months in port wine barrels. The unique maturation process gives this single malt its distinct notes of juicy fruits, nuts and spice, as well as a hint of ruby redness. Its best enjoyed neat or over ice.

An inviting nose where barbeque smoke and cloves are intermingled with fresh notes of butterscotch and orange peel. On the pallet a fascinating blend of Applewood smoke, honey and all spice are married with stewed pears and fresh grilled pineapple. This whiskey finishes with the return of a savoury smoke over a lingering wood undertone, which combines delightfully with notes of salted caramel.

First released on the Australian market in 1989, Gentleman Jack is a premium brand from the Jack Daniel's distillery in Lynchburg, Tennessee. The formula is based on early trial work carried out by Jack Daniels himself and is bottled to celebrate his whiskey being awarded a top gold at the St. Louis fair in 1904. Gentleman Jack remains consistent with the original Jack Daniel's style, it does however, differ in being a 'single whiskey', not a combination of whiskies blended together. Unlike any other whiskey, Gentlemen Jack is also charcoal mellowed twice though maple wood, once before aging and once again after. The distillery describes this process in their own distinctive way: ' Jack knew what a single journey through the charcoal meant to his exceptional whiskey - how the coarsely ground maple charcoal mellowed out the harsh oils and impurities that threatened the smooth, warm character of the whiskey. Imagine what a second trip would do, he mused. And so, throughout his life, he experimented with charcoal mellowing his whiskey twice. The process proved so painstaking, he never crafted enough of his new whiskey to introduce it to the world. Happily, he saved the recipe. In 1988, we finally put our founder's formula into limited production, and Gentleman Jack became the first new whiskey from the Jack Daniel Distillery in more than 100 years. No, our folks in product development have never been known for speed. We think a good thing is worth waiting for and, in the case of Gentleman Jack, I think you'll agree, we were smart to wait and get it right.' Yellowstone Select Kentucky Straight Bourbon Whiskey has been hand-picked by Paul and Steve Beam, and is a marriage of two high-rye Kentucky straight bourbon whiskies, one aged four years and another aged seven years.Yellowstone Select bourbon has spicy aromas of rye toast and cinnamon spice, which lead to a palate filled with caramel, melted butter and leathered cherries. The finish is slightly tangy, with additional notes of burnt brown sugar and cloves

Gentleman Jack gets its unique mellow smoky flavour from being twice filtered through charcoal as opposed to the regular single filtration for Jack Daniels. The Whiskey is then aged and filtered again before bottling.

Rye is a whiskey perhaps best known as the backbone of cocktails like the Manhattan, Sazerac and Old-Fashioned, however the last few decades has seen it re-gain traditional ground over bourbon and Tennessee whiskey as a standalone spirit. Among the more fanatical of the recent protagonists are the team behind Whistle Pig. First released in the summer of 2010 to great critical acclaim, their rye received 96 points from Wine Enthusiast, the highest rating ever for a rye whiskey, as well as a “highest recommendation” from Spirits Journal, plus accolades from The Wall Street Journal, GQ, Forbes, Maxim, Imbibe Magazine, and many others. For Australian rye whiskey enthusiasts, it became one the most awaited releases of the year. The key figure behind production is David Pickerell. Fourteen years Master Distiller for Maker’s Mark in Loretto, Kentucky, a luminary of whiskey knowledge and one of the nation’s pre-eminent distillers, he arrived at Whistle Pig with a simple objective: To create the world's finest rye. "You cannot get more flavour in whiskey than you can with rye" , enthuses Pickerell. "The bad news? From a business standpoint, it takes longer to age rye whiskey. Rye is stubborn and robust. It has spicy character, and a dark, rich flavour. To attain its signature smoothness, rye must be aged (a minimum of 9 years is ideal). Rye isn’t sweet. In fact, it contains less sugar than any other grain. The challenges involved in producing rye whiskey are many. But when handled properly, there is no comparison." Pickerell illustrates the difference between rye and bourbon in food terms. "Think of the sweet flavour of a fluorescent yellow cornbread that you nosh with BBQ" , he explains. "Now imagine the earthy, spicy, powerfully brooding flavour of rye bread or pumpernickel used at a gourmet sandwich shop". These differences that express themselves in bread also come across through the distillation process. We tend to agree. Pure, aged rye tends to be more flavourful and complex than almost any corn-based whiskey. Rye is also conducive to sustainable agriculture. It grows densely enough to exclude weeds, keeping the need for herbicides to a minimum, and it's an excellent scavenger of soil-bound nitrogen, rendering heavy fertilisation unnecessary. Up until recently, Whistle Pig's rye was been distilled and matured in Western Canada (reputedly sourced from the Alberta Premium distillery), then bottled in Vermont, making them a ‘non-distiller producer’ or NDP like Willett, Jefferson's or Angel's Envy. In the summer of 2014, after a three year legal process, the company finally obtained a permit to construct a farm-style distillery, with all the rye grown on site. They continue to use new American Oak or early use bourbon barrels for all their maturation. Retasted September 2020...
