Four Pillars Spiced Negroni Gin is an aromatic, rich and spicy gin with great power and intensity. First, they take the base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then the addition of an exotic West African spice called Grains of Paradise. Although powerful, the spice tends to glow rather than become hot. Beautiful organic blood oranges are one of the last additions to the botanical basket, as well as some ginger. These wonderfully fragrant fresh botanicals help lift the spice to another level.

This is a BIG gin so be ready! Double juniper gives a bold & not to be ignored entrance followed by 3 tiers of citrus spark offering butter and sweet profiling. Herbaceous and earthly floral leaves notes of garden rain on the palate.

Big, dry and peppery. Big Dry has notes of rosemary thyme, kaffir lime and sage, but what sets this gin apart is the jalapeno we use to give it that extra kick. Shirl the Pearl 2020 Harvest, a seasonal edition Cumquat Gin with fresh uplifting notes, zesty characteristics, and a long finish. Expect refreshing waves of orange blossom. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.
