McLaren Vale is well known for its ability to make full bodied red wines, in particular concentrated Shiraz, and this deluxe wine is a perfect example.Deep, dark red. From a 37-acre vineyard, Château Pavie Macquin is stunningly situated on the clay-limestone plateau of Saint-Émilion on the right bank of Bordeaux. 2010 has produced a formidable wine: a blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon, this is a top release of the harvest year and a highlight from St-Émillion in 2010. Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.

Hand-picked from the top section of the 1891 Ancestor Vine block, the fruit was fermented in a two-tonne open fermenter and the skins were hand plunged three times a day. At sugar dryness the wine was drained off and the skins pressed. The resultant wine was transferred straight to barrel and matured for nearly two years in one new and two older French oak barriques. Elegant, restrained and poised. A wine of integrity and finesse. Red fruits following on the palate, fine French oak char and fine grain tannins.
