Selected from the best rows off our small vineyard in the world famous Coonawarra wine region. The renowned quality of Coonawarra is a product of its thin rocky soils and underlying soft crumbly limestone which naturally produces balanced vine canopies and small crops of intensely flavoured fruit. Displaying delicate black and red fruits with lifted spice and floral notes. A finely structured Cabernet that will gain further complexity with cellaring.

The aroma is complex and intense, showing lifted green capsicum, perfume, chocolate, savoury meats and menthol. It has a lovely, balanced palate with fine grippy tannin, fleshy fruit texture and lots of up front flavour. As this wine spends time in the bottle, more complex fruit and developed character will reveal itself from behind the robust structure.

Bright currant and dark cherry fruit is flanked by fine, savoury tannin, giving the palate both intensity and directive structure. Layers of sweet fruit and savoury notes combine to give a wine of complexity and seamless balance. A persistent finish displaying distinctive Coonawarra cassis fruit and mouth-coating, chalky tannins.

The nose displays lifted fresh pure red and blue fruits accompanied by subtle spicy cedar oak notes. The palate vibrant fruits of plum and blueberry are supported well by spicy oak. The palate is of medium weight with an elegant structure, round and soft with a fine tannin finish and lingering fruit flavours.

deep ruby colour and vibrant aromas of blackcurrant, cassis and mint, layered with hints of black olive, cedar and subtle tobacco from well-integrated oak. The palate is medium-to-full bodied and refined, with ripe dark berry fruit supported by elegant, structured tannins and savoury spice nuances. It finishes long and harmonious, balancing richness with freshness, and has the structure to reward further cellaring.

The complex palate reveals itself with style. Traditionally assertive Coonawarra tannins are evident at first, before giving way to a mid palate filled with ripe cassis, olive tapenade and complex briary hints. Fine, dusty tannins give excellent line and length, and are layered with sweet and toasty characters reminiscent of crýme brýlýe. Our unique Double Barrel technique of finishing in aged Irish whiskey barrels has integrated the myriad of flavours and brought extra richness to the palate.

This De Bortoli Cabernet Merlot blend combines rich, dark berry from the Cabernet's flavour with soft, plumy Merlot. An ideal accompaniment to pasta, veal or pork.

Devil's Lair The Hidden Cave is a concept from a Margaret River icon that showcases the daring with a twist of exoticism. The Cabernet Shiraz delivers aromas mocha, coffee and cassis with a hint of star anise. Tobacco leaf is also present which gives way to a rich and voluptuous palate of blackberries and dark chocolate. A truly engaging blend.

This wine is classic Coonawarra in style with ripe berry and cassis aromas and flavours layered over fine tannins. Cabernet is the major component and backbone with Merlot adding softness and drinkability.

Varietal aromas of mint and cassis are well matched with subtle vanillin oak on the nose. The palate is supple and smooth the blackcurrant flavours framed by fine ripe tannins. Try it with roast lamb.
