The Coonawarra region is a flat terrain, located on the Limestone coast in South Australia. Beneath this beautiful landscape lies a limestone ridge and contrasting soils which provide the perfect conditions for crafting great wine. On the nose, lifted raspberry, spice with subtle oak that leads to a generous mouth full of dark berry flavours. Long gentle, puckery tannins provides a long finish. Patrick of Coonawarra Methode Eucalypt Cabernet
Welcome to ED.02 of our Methode Eucalypt. After 2020s raging success, we are so excited to release the next vintage. This trial tests the hypothesis that vineyards amongst gum trees take on some aroma and flavour of Eucalyptus. Grapes were mechanically harvested in close proximity to Red Gums into 1T bins. The resultant wine showed significantly increased Eucalyptus aroma and flavour. This matured into a distinctly Australian Cabernet Sauvignon that expresses the environment and place in which it was grown. Balanced minty Or Eucalyptus aromas and flavours add to the Cabernet Sauvignon’s complexity, creating a uniquely Australian wine. It is a wine that expresses terroir in the true sense of the word.
Winstar Cabernet Sauvignon Coonawarra
This wine reveals a deep rose-red hue, layered with Coonawarra’s signature hints of mint and blackberry. Aromas of blackcurrant and ripe forest berries rise from the glass, complemented by over 12 months of ageing in French oak. Subtle notes of cinnamon and toasted oak add warmth and complexity to the finish.

This is what a wine in the optimum drinking window looks like. Full of oomph and bravado, this strapping back-vintage cab is not for the faint of heart. Packed with succulent, ripe berry fruits, charry and vanillin oak and leather – this is not one to pull the bat away from big, bold flavours. Marked by a toasty oak profile, there's a whack of tobacco, clove and freshly roasted coffee perfuming the nose and palate. This is quite the wine to impress.
