Our interpretation of a traditional British Navy Strength gin, KI NO BI SEI is made using the same production method with 11 botanicals distilled in 6 distinct flavour categories: the final blend has been recalibrated to bring out the botanicals at maximum intensity. Yarra Valley makes some of the finest wines in the world. In 2015, Four Pillars combined Rare Dry Gin with some of the best Shiraz Grapes in Australia to create Bloody Shiraz Gin for the first time. 2018 release has great depth of colour compared to previous releases. After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon.
