Chapel Hill's Michael Fragos loves using The Parson Shiraz to showcase McLarenVale's diversity and varietal character. The Shallow soils over livestone in maritime influenced vineyards between McLaren Vale and Masline Beach and also around Bowering Hill, provide explosive blueberries and liquorice with finesse and a wonderfully framing tannin structure. Up in the foothills of the Mount Lofty ranges, a Kangarilla vineyard offers Indian spice complexities that many higher priced wines would simply love to have. The added length and savoury tannins of this component and the use of some French oak result in a beguiling final release that is extraordinary.

To achieve the desired style and to harness the regal varietal flavours of Cabernet Sauvignon, the grapes are strategically harvested to avoid any green tannins or overripe jammy fruit flavours. Chapel Hill are in the fortunate position to be the custodians of some of the most unique vineyard sites in McLaren Vale; showcased by The Gorge vineyard planted in 1993. With the gently undulating soils, which are derived from prized ancient rock formations, are further enhanced by the elevation as the site perfectly capitalises on the beneficial coastal influence. The Parson GSM is a traditional take on three of McLaren Vale's most important and historical varieties. The wine displays hints of rosemary and aniseed the nose. The big palate is layered with liquorice and dark chocolate flavours that are beautifully interwoven into the textured firm tannin structure.

The Hill Block straddles the ridge running through the Chapel Hill estate. The wine was then aged for 19 months in 100% tight grained French oak. The proportion of new oak was kept low to encourage the continued expression of the characters that are unique to the vineyard site.

In 2024, we’re celebrating our fiftieth vintage with the release of a new flagship wine.A single block wine that epitomises our meticulous approach to everything we do. Every aspect has been carefully considered to ensure The Devil is the most characterful and expressive wine possible. With just eight barrels produced, The Devil really is in the detail. Gentle and patient winemaking is preferred to ensure that the wine expresses the unique site characters of the House Block. The hand harvested grapes were gently crushed and then fermented in an open fermenter and hand plunged to facilitate subtle tannin extraction. After 12 days on skins the fermenter was basket pressed and the free run and pressing fractions were combined. The wine was then aged for 20 months in 100% tight grained French oak. The proportion of new oak was kept low to encourage the continued expression of the characters that are exclusive to the vineyard site. To preserve purity and character the wine is made with minimal additions and is allowed to clarify naturally without the use of fining or filtration. Opulent layers of dark berry fruit sprinkled with roasted spices. A silky mouthfeel with moreish complexity, sublime balance and graceful poise. A wine to celebrate our heritage and herald our future.

After cellaring, Chapel Hill’s McLaren Vale Shiraz reveals an even deeper connection to its origin and style. The savoury, brooding edge of McLaren Vale has softened into layers of earthy complexity, while the plush dark fruits remain, now more concentrated and seamless. Time has added polish and elegance, lifting the wine to a beautifully balanced, almost ethereal expression of the region.
