Sullivans Cove Old & Rare American Oak Second Fill Single 16 Year Old Single Malt Whisky (TD0252)
Product Information: Sullivans Cove stays true to its promise of bottling only the unique and exceptional. TD0252 reached its peak after 16 years of maturation in a single American Oak ex-Bourbon cask. The result is remarkable depth and character, with only 195 bottles in existence, making each one a rare opportunity to experience the singular complexity of this extraordinary whisky. This release is vibrant yet contemplative. The oak presence is pronounced but refined, allowing for a seamless interplay between warm spices and fruit. Huon pine lifts the spirit with an alpine freshness, adding a herby complexity. You’ll discover deep leather, charred corn, and sizzled butter, all closing out with earthy baking spices, cedar, and a coffee-ground finish. Matured for 16 years in a single 200L American oak ex-Bourbon cask, this release is bottled at 48.2% ABV and yields just 195 bottles. Sullivans Cove’s Second-Fill casks are a truly special part of the distillery. Select American Oak and French Oak barrels are refilled to provide a gentler oak profile, allowing the spirit to shine. The Second-Fill range has quickly become a favourite, offering the characteristic flavours of each oak type in a more restrained and delicate style. This range represents the distillery's distinct spirit character in its purest form. Maker: In 1994, on a remote island at the far end of the world, Sullivans Cove distillery was brought to life from humble beginnings. Far from the whisky establishment, Sullivans Cove was free to explore and perfect its process, blending tradition with innovation. Two decades later, this commitment to crafting exceptional whisky—patiently aged and inspired by nature—was rewarded when Sullivans Cove was named the World’s Best Whisky. Suddenly, the world knew about the special things happening on Tasmania’s 'Apple Isle,' and whisky lovers globally were intrigued. The wash is brewed locally by experienced brewers and then double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before being placed in casks for ageing. Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing for many years in Tasmania’s unique climate—typically between nine and eighteen years. The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Nose - Dates, Cacao Nibs, Orange Peel Vibrant and with aromatic oak presenting as antique furniture, incense, and Autumn leaves. As it opens in the glass, the spirit and ex-Tawny pre-fill come forward through the oak with a beautifully integrated array of fruity and briny notes: bonito flakes, blackberry syrup, orange pulp and more berries. Dates, cacao nibs, candied orange peel and fresh orange provide depth and carry a smooth transition to the palate. Palate - Peaches in Syrup, Vanilla, Bran Cereal Palate Very quickly characterised by a wave of tight tannin; Tawny and oak-forward for just a moment, and then an explosive, bright and juicy fruit profile presents peaches in syrup, orange cordial and raspberry jam. A divine vanilla syrup note mingles with a savoury base element (bran cereal, and bonito flakes again), as clove and aniseed point back to the spirit character. Rose, sticky date pudding and fruit mince pies linger on the back palate. Finish - Mandarin, Musk, Nutmeg A beautifully long and layered finish presents mandarin, musk and nutmeg. Red dates and Madeira come next - incredibly rich and earthy, classic Tawny influence - and lots of liquorice mingles with notes of raisins and orange cake. Vanilla musk echoes throughout. From humble beginnings, Sullivans Cove has become a symbol of excellence, with its whiskies winning the world’s highest accolades, including being named the World’s Best Whisky. Tasmania’s unique climate and pristine environment provide the perfect setting for whisky production, allowing Sullivans Cove to craft spirits that are distinctive and exceptional. Each bottle produced at Sullivans Cove is a testament to the commitment of the team, from selecting the finest Tasmanian ingredients to employing traditional methods with a modern twist. The distillery’s approach focuses on patience and precision, ensuring that each cask reaches its natural peak, producing a whisky that reflects the true essence of the island and the distillery’s rich heritage. Philosophy: Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, Sullivans Cove distillers seek the sublime. Each cask is nurtured to its natural peak, with thousands of tiny decisions helping each batch reach its full potential. No two batches are the same, making every release an opportunity for exploration. Tasmania’s pure, clean water and fertile barley-growing land make it an ideal location for producing world-class whisky. This combination of high-quality water and grain is the foundation of all Sullivans Cove whiskies. All Sullivans Cove whiskies are made from 100% Tasmanian malted barley. Tasting Notes Nose Rich & Complex Vanilla, caramel, and ripe stone fruit. Subtle hints of baking spice and a touch of oak mingle with the delicate fruitiness, giving way to a deeper, almost earthy complexity that speaks to the maturity and natural environment in which the whisky was aged. Palate Smooth, Bold & Full-Bodied Deep flavours of honeyed sweetness, vanilla cream, and hints of roasted nuts. The American oak imparts a powerful but balanced depth, while the Tasmanian ingredients provide a smooth and velvety mouthfeel. A delicate spice and fruit balance rounds out the experience, giving this whisky an enticing richness that lingers on the palate. Finish Elegant & Lingering Long, warming, and complex, with the oak's intensity tapering off into a subtle, mellow sweetness. Fine tannins and a slight minerality provide a delicate grip, allowing the whisky's full character to shine through in a satisfying, lingering conclusion.
