Lark Ruby Pinot Finish Single Malt Aus Whisky
Our Limited Release Ruby Pinot Cask Finish is a tantalisingly light and fruit-filled composition; a single malt whisky with notes of orange blossom and honeysuckle that embodies the characteristics of a crisp, Tasmanian spring morning. A combination of Port, Sherry, Bourbon, White Oak and Wine casks from our Bothwell Distillery were selected to complement the juicy flavours of vibrant berries from the finishing casks: Frogmore Creek’s ex-Ruby Pinot Noir fortified wine casks. With mouth-watering inflections of mandarin, maple and meadow honey, this is a compellingly crisp single malt whisky reminiscent of a springtime sunrise in the Tasmanian highlands. Mouthwatering mandarin, maple, meadow honey, macadamia, and marizipan. Bright and juicy notes of black cherry, orange blossom, and toasted oak, topped with vanilla bean whipped cream, just delicious.

Packed with brandy-buzzed pudding, dried fruit, oak and a hint of smoke on the palate, our limited-release Brandy & PX Sherry Cask will warm you from tongue to toes. From a thoughtful selection of our Bothwell Distillery’s bourbon, sherry and white oak casks to a balance of both Seppeltsfield PX Sherry and Lark brandy barrels comes a mosaic of a single malt both quaint and comforting. Full of dark forest fruits, bright citrus peel and Tasmanian brandy blanketed in toasted oak, this indulgent little dram is as a slice of fruitcake and a cuppa. A sticky, plummy, homemade fruit cake in a glass, Orange peel-infused caramel pudding topped with spices. Dried fruits play off the rich, earthy oak.
Lark Muscat Finish Single Malt Australian Whisky
The successor to one of our most celebrated and award-winning releases to date, our latest Muscat finish is a lavish and indulgent dram. Lark’s Head Distiller, Chris Thomson, hand selected the finest Muscat casks from Seppeltsfield Winery, to finish out this rich whisky. A moment of syrup and toffee pecan magic. Easily mistaken for ice cream topping, or a fine Tasmanian fig paste, with creamy mocha on the palate, and a long chocolate orange finish. Best served with friends after dinner. Buttery raisin toast wafts into spiced citrus and cocoa, Cloying figs arrive, followed by golden syrup dumplings and creamy mocha.A long orange chocolate with finish.

The finish is rich in fresh fruit and citrus. This whisky has length, poise and balance.
Pinot Noir Aged Brandy
Inspired by the great Armagnac and Cognac regions Charles Reuben Estate selected some of their finest estate grown single vineyard Tasmanian Pinot Noir to produce this truely unique paddock to glass brandy. This spirit matured in New American Oak and Bourbon casks for 3 years giving this limited release a unique flavour profile of soft elegant wine, vanilla and spice. The result is a well balanced and smooth Brandy that is true to the land where it was created with no artifcial colouring or flavouring added.

Pooley Butchers Hill Oronsay Pinot Noir
The Pooley's planted their first vineyards over 35 years ago in the Coal River Valley of southern Tasmania. In 2013, after working in some of the best wineries around the world, Anna Pooley became the 3rd Generation winemaker of the family business, propelling the estate to critical acclaim. Their vineyards are set on excellent sites that receive very long sunlight hours for optimum ripening while producing fruit with finesse thanks to the close proximity to the cool Tasman Sea. The Butcher’s Hill ‘Oronsay’ Pinot Noir is produced from 20-year-old vines (MV6 clone) on a north-facing slope at 30-100m above sea level. Following a 100% whole bunch fermentation of 21 days, the fruit was pressed to French oak barriques, 40% being new barrels, for 14 months of elevage. Expect a lively acid profile with chalky yet ripened tannin, pronounced weight, aromas of wild cherry, and an underlying savoury character.
