House of Arras Grand Vintage is at the pinnacle of Australian sparkling wine! The fruit is sourced from the cool climate region of Tasmania where Ed Carr (Gourmet Wine Traveller Winemaker of the Year 2011) and his team produce an outstanding wine of incredible complexity and character resulting from extended maturation on yeast lees. Our Limited Release Ruby Pinot Cask Finish is a tantalisingly light and fruit-filled composition; a single malt whisky with notes of orange blossom and honeysuckle that embodies the characteristics of a crisp, Tasmanian spring morning. A combination of Port, Sherry, Bourbon, White Oak and Wine casks from our Bothwell Distillery were selected to complement the juicy flavours of vibrant berries from the finishing casks: Frogmore Creek’s ex-Ruby Pinot Noir fortified wine casks. With mouth-watering inflections of mandarin, maple and meadow honey, this is a compellingly crisp single malt whisky reminiscent of a springtime sunrise in the Tasmanian highlands. Bright and juicy notes of black cherry, orange blossom, and toasted oak, topped with vanilla bean whipped cream, just delicious.

The E.J. Carr Late Disgorged is a special, 30th anniversary release housed in a limited 1566 bottle edition. This spectacular wine is a true showcase of the prestige of the House of Arras style with its hallmark craftsmanship of extended lees aging - this wine for almost two decades. The Bouquet, Aromas of classical lemon curd and marzipan intertwine with hints of fresh brioche, field mushroom, truffle and caramelised walnuts. The Palate, An elegant and refined palate with notes of lemon curd, roasted almond and nougat alongside underlying yeasty and creme brulee characters. The low dosage accentuates the vivacity and purity of the fruit. Undergoing 16 years in tirage allows superb depth and complexity to the palate. Enjoy as an aperitif and as a versatile accompaniment to an array of gastronomy, most notably fresh seafood. This wine is an extraordinary example of time in tirage and therefore worthy of a celebration by itself.

LARK DISTILLERY Limited Release Christmas Cask Finish Single Malt Whisky 44% ABV, Tasmania

Named after Nick Glaetzer's mother Judith. Single vineyard Pinot Noir, aged in 100% new French oak. Incredible length and concentration, like no other Tasmanian Pinot Noir. Only 580 bottles made.

The heavy charred fortified french oak wine barrels were re-crafted in Tasmania giving distinct and unique flavours. In the glass, Corra Linn whisky has a beautiful shade of gold amber. While on the nose it has a rich deep aroma, that brings memories of a luxurious port soaked fruity Christmas pudding. The taste does not disappoint, with the perfect balance of sweetness and spice. An initial oaky taste comes through merging with cardamom, cinnamon, garam marsala with a hint of curry and speculoos. It has a great mouthfeel leaving a satisfying, well rounded and long lasting flavour with ginger nut tones. This is a whisky that has many layers of complexity and a great story from our small batch distillery.
