A marriage of 30% American Oak ex-bourbon casks and 70% American Oak Cabernet casks from South Australia's Clare Valley wine region, renowned for bold, elegant Cabernet to rival the best in the world. These casks have been shaved, toasted and re-charred. Vanilla fudge, lemon drizzle cake, candied orange-peel before a harmonious balance on the palate reveals stewed plums with cinnamon, fig jam, praline, cream-butter pastry and vanilla custard. A collaboration with South Australia's award-winning Main & Cherry wines, these casks held shiraz sourced from the cooler regions of McLaren Vale, before being re-coopered and given a medium toast and char to integrate our spirit into the wine and the wood. In sourcing the finest French oak grenache wine casks in the country, Spirit Thief headed straight for the Clarendon region of the Adelaide Hills. Where the climate is reminiscent of the Mediterranean and grenache is thriving in the fertile soils of the new world.
