David Hook Orange Vermentino

Vermentino is widely planted throughout the Mediterranean, often along the shore lines of both coasts and islands, where it produces bright clean lively wines with classic sea spray and wild herb characters. The variety has good acidity and can be made in several styles. The lighter aromatic style achieved with light pressing and cool fermentations generally without skin contact or oak maturation highlights the varieties fresh fruit and acidity. The grapes for our 2022 Vermentino are frome the Central Ranges grown at altitude on the slopes of Mount Canobolas at Orange. The wine was stored on lees in tank for 3 months prior to bottling. The resulting wine is pale straw in colour with slight green tinges. It has aromas of orange blossom, ripe nashi and a flinty background. The palate is rich with ripe citrus flavour and the wine finishes with a touch of salinity and a slight pithy grapefruit bitterness. The perfect wine with grilled sardines.

Fantastically fresh and appealing on the nose with intriguing hints of aniseed. The palate has a superb texture and weight that will have you coming back again and again.

Escape Room Vermentino

On the nose, ginger and chamomile and lashings of lemon tea with a hint of smoky whisky. A generous and textural palate of grilled stone fruits and grapefruit pith with a salivating, saline finish. Savoury, complex and mineral yet perfectly balanced. The Vermentino grapes are wild fermented on skins and we lightly plunge the cap a couple of times a day. After 7 days, the skins are basket pressed and the wine is matured on yeast lees for 12 months; six months in seasoned french oak followed by six months in stainless steel. When we bottle, its unfiltered, with just a squirt of sulphur, to keep it fresh.
