2014 is the inaugural release of Colleens Paddock Pinot Noir. It features a restrained, brooding and beguiling nose with hints of cranberry, sour cherry, wild raspberry, earth, stalks and charry oak. The aristocratic palate weaves an uncommon melange of toffee fruits, herbal flavours and savoury elements through fine, integrated tannins and delivers an elegant, luscious, velvety mouth feel. It combines lightness with richness and density with great length and persistence of flavour.

A small but brilliant parcel of fruit meant our flagship Five Clones Shiraz was on the menu again. The nose is abundant with black and blue fruits also seen on the palate, which is full bodied and underpinned by fine tannins. Further breathing reveals more layers of flavour and complexity after the initial tranche of bright fruits. A superb example of care in the vineyard and judicious winemaking. Enjoy now with decanting or cellar for up to 20 years.

Chardonnay, the emblematic variety of great white Bourgogne wines. VINES The vineyards of the Bourgogne Côte Chalonnaise Appellation are found in the form of small “islands” between Chagny at the northern limit with the Côte de Beaune, and Saint-Gengoux-le-National in the south, bordering on the Mâconnais region. Our vineyards are East-South-East facing and source the characteristic appeal of our Bourgogne Côte Chalonnaise in stony, shallow chalky-clay soil rich in limestone. WINEMAKING AND MATURING Crop harvested when perfectly ripe. Pneumatic pressing in order to maintain the quality of the juice. Measured settling of the must to reveal the richness of the terroir. Alcoholic and malolactic fermentation, along with some maturing in stainless steel vats, bring out the intensity of the flavours. Some maturing is also done in barrels to bring structure. Bottling at the optimum moment followed by a resting period before marketing. TASTING NOTES Pale golden colour with a bouquet of yellow-fleshed fruit (peach). A straightforward and satisfying white Bourgogne with a mineral finish. A delectable expression of the Chardonnay grape. Serving temperature : 11 to 13°C

Our Orange Chardonnay show classic cool climate fruit characters of white flowers and peach, integrated with barrel ferment complexity. A crisp and elegant style with lovely nectarine-like acidity. A wine to be enjoyed now or will benefit short term cellaring.

This is a delightful addition to our sparkling portfolio. The domaine made its first crémant in 2004, and to this day, it remains a 100% Pinot Noir Blanc de Noirs sourced from a parcel of red Bourgogne Côte Chalonnaise. It is labelled Nathalie Theulot and is one of a small number of negoce wines made at the domaine. The style is squarely focused on drinkability and refreshment, and to this end, the base wine is fermented in inox tanks before going to bottle. Unlike her Mercurey whites, Nathalie Theulot vinifies the juice at low temperatures (14°C) to preserve as much delicate red fruit aromatics as possible.
