The fruit for Lady Marmalade is sourced from hand tended blocks at the mouth of the Goolwa River of the Fleurieu Peninsula. The harvested fruit is destemmed and crushed into stainless steel tanks with only the finest quality free run juice being chilled to 5 degrees Celsius to preserve the expression of the fruit. Lady Marmalade Vermentino is an exciting, fresh, food-friendly white wine. The grapes are vinified in white in steel at a controlled temperature. After fermentation, the wine remains on its own yeasts for four months, during which a couple of battonage are carried out per week so that the wine regains structure and aromas from the yeasts. Bright straw yellow; nose dominated by fine hints of lemon balm, hawthorn, grapefruit with a finish of mint. Acidity and flavor are balanced by giving balance and persistence.

APPEARANCE: Pale straw in colour. AROMA: The bouquet is characterised by floral notes, apple and almond. PALATE: The palate is one of vibrancy and crisp acidity on a quite saline, minerally base. Totally moreish.
