Like his graceful dance to the ocean's depths, this gin captures the essence of the majestic creature, celebrating its rare, captivating allure. Coral Sea Gin is an artisanal blend of meticulously selected botanicals. At its heart lies the juniper berry with lively citrus notes dancing alongside, capturing the vibrancy and energy of the underwater world. Further enhancing the complexity, a delicate fusion of native botanicals include lemongrass, mandarin and Rosella. Naturally infusing Rosella, a tart Hibiscus flower, leaves a lingering sweetness. This adds a distinctly Australian touch, with a unique sense of place. A velvety gin that smoothly caresses your palate, unveiling layers of flavours that mirror the reef's breathtaking diversity. *All botanicals used are either certified organic or spray free. Burdekin Rum Distillers Edition - Coral Sea Strength

Second Giru Cane Spirit is crafted again from local sugarcane, cut and crushed in paddock in the spring of 2024. Bottled overproof at British Navy (Coral Sea) Strength, only 600 limited edition bottles were filled.

Clement Rhum Vieux Colonne Creole

Distilled in the old columns of the Factory of Simon-located just in front of The Rum Company-small columns and entirely made of copper, this rum old Martinican was developed in exceptional conditions. The peculiarity of this columns lies in the exhaling of intense perfumes that give the rum a particularly expressive and round profile. This lot was chosen with care by the Maître de Chai and the oenologist of the House, Robert Peronet and Gaëlle Hardy. It is an assembly composed of rums aged between 3 and 10 years in red barrels of Bourbon. It is the gourmet and exotic notes of vanilla, coconut and chocolate that rub shoulders with those of dates and subtle tobacco, which seduced the experts Clément.

Interesting label but why the fish? Simple. We love fishing and the Coral Trout is one of our favourites! Vineyard: Con Mara Vineyard, Whorouly South Region: Alpine Valleys Harvested: March 2018 Volume Made: 44 Dozen Winemaker: Jo Marsh and Glenn James Alc: 14.5% Dosage: 20g/L Winemaking For the base wine, the fruit was handpicked and destemmed directly to open fermenters. Fermented with indigenous yeast, the ferments were gently hand-plunged twice daily. The wine was then pressed off a few days after completion of primary ferment and matured in old French barriques for two years. Tiraged in June 2020, the wine was then allowed 29 months of maturation onlees before being disgorged in November 2022. Tasting Note Attractive bright garnet in colour with just the right amount of fizz. Aromas of ripe cherry andchocolate are interlaced with attractive savoury spice. The palate is generous, and packed with dense dark fruits. Balanced sweetness is paired with a mouth-filling creaminess owed to time spent on lees.
