The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Fresh lifted aromas of lemon, lime, guava and pineapple. On the palate, zesty flavours of lemon, lime and grapefruit with a small portion of Semillon adding complexity and mouth feel before leading to a crisp dry finish.

Lifted aromas of fresh herbs and elderflower blossom. Crisp wine with white peach and lime flavours on the palate.Partial ferment in seasoned oak barriques, lees stirred to add wonderful complexity, blended with a stainless tank fermented portion for a bright fresh wine.

On the nose, intense gooseberry and tropical fruit aromas of the Sauvignon Blanc are balanced by herbaceous and freshly cut grass of the Semillon. The palate of this Houghton wine is refine with a length balanced crisp finish.
