Piper-Heidsieck's roots trace back to Florens-Louis Heidsieck, who created the original company of Heidsieck & Co. Christian Heidsieck joined the venture alongside Guillaume Piper and once Florens-Louis died in 1828, the duo decided to continue the adventure side by side, founding Champagne Piper-Heidsieck. In 2021, Piper-Heidsieck launched their new series of Champagne "Hors-Série" and the first release was Vintage 1971. November 2022 saw the release of the next Hors-Série, which is Vintage 1982. Hors-Série 1982 has been disgorged in the spring of 2022 after 39 years of storage on lees by current cellar master Emilien Boutillat. The results of the 1982 harvest are considered amongst the most exceptional ever witnessed in the history of Champagne. The grapes grew under steady weather conditions. The results were irreproachable and the harvest abundant! The grapes, all varieties included, were in excellent condition and stood out for their finesse, equilibrium and grandeur, hallmarks of a great year in Champagne. Émilien Boutillat stays true to the Hors-Série spirit of offering a unique and unexpected tasting experience. A bridge between the Piper-Heidsieck history and its modern spirit, Hors-Série 1982 joins the collection. The liqueur de dosage, crafted from 1982 vintage magnums, respects the personality and balance of the wine. It has been dosed at 4 grams of sugar per litre, just like the Brut Sauvage 1982. Conducted during the disgorgement on 17th and 18th January 2022, the Extra Brut dosage accentuates the vibrancy, freshness and minerality of the vintage. A blend of 60% Pinot Noir from Verzy in the Montagne de Reims and 40% Chardonnay from Côte des Blancs, the Hors-Série 1982 boasts its own particular personality, forged by 39 years of ageing on lees. This distinctive feature ensures a unique tasting experience and justifies numbering each box. Only 2500 bottles were produced. With a pale golden robe, the Hors-Série 1982 unveils luscious notes of mirabelle plums, kumquats, dried pineapple, and fresh quince, highlighted by a touch of ginger and bergamot tea. Smoky accents of coffee beans and toast balance out the wine’s minerality.

The Kevin John Chardonnay is Cullens flagship white from their biodynamic vineyards. A refined and elegant style brimming with white peach and citrus, showing bakery nutty complexity and deft oak integration. The wine is named in honour of Vanya Cullens father, the late Kevin John Cullen. Grapes are harvested on a flower or fruit day and whole-bunch pressed to obtain the highest quality juice. It is then barrel fermented with native yeasts in French oak barriques and matured for approximately 7 months in one- third new and two-thirds seasoned oak barrels.

This emblematic domain in Saint-Aubin is also a major producer in the Côte d’Or, and other quality areas of Burgundy. Their expertise has been handed down from father to son since the 19th century, along with groundbreaking work to help the appellation Saint-Aubin to shine. Domaine Roux was started in 1885 with a plot of vines bought by Louis Roux in the village of Saint-Aubin. His grandson Marcel Roux, born in 1927, played a pivotal role in the development of the domain, extending the holdings to over 25 hectares in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet, Meursault and Santenay. He was a leading light in establishing the reputation and value of the Saint-Aubin appellation around the world. The Saint-Aubin appellation extends over an altitude vineyard that produces white wines of good quality, and whose reputation continues to grow. Its area is 1.6 square kilometres, on an area set back from those of Puligny and Chassagne. The wine landscape is very hilly and is therefore home to several climates with very variable exposures and soils. Local appellations and wines classified in Premier Cru are spread over four zones. This Saint-Aubin has a beautiful coloration with golden highlights. When young, it combines aromas of white flowers, flint, green almond, and orange-flower. Richer fragrances come with age: beeswax and honey, marzipan, ambergris, and cinnamon. This is a firm and flattering wine - it becomes fleshier and fuller with time. This is a wine with real breeding.

A legacy since 1734, Champagne Taittinger is the largest eponymous family owned Champagne House and one of the top, independent champagne brands in the world. This family of growers cultivates the second largest vineyard in the Champagne region. The composition of the house’s cuvées is a result of an intuitive and complex process, one which the Taittinger family know how to create and sustain; a Champagne which is completely unique. The Taittinger Comtes Blanc de Blancs 2007 is a lively champagne with a light, abundant bubble. There is a bouquet on the nose of pears and fresh cut flowers and flavours of lemon zest and fresh pineapple. A delicate balance of finesse and aromatic intensity.

Pierrick Laroche, the proud owner of Domaine des Hâtes, continues the legacy of his family's estate located in the picturesque village of Maligny, in the north-west sector of Chablis. Established by his father in the 1970s, Pierrick's family vineyard holdings have gradually expanded over time, resulting in the current size of around 33 hectares. After obtaining a degree in oenology from Beaune, Pierrick embarked on a journey to gain valuable experience by traveling the world and undertaking various internships. Armed with knowledge and a deep passion for winemaking, he returned home to take over the family vineyards and start producing his own wines. Pierrick's cellars, ingeniously built into the side of a hill in the village, allow for much of the winemaking process to be conducted by gravity ensuring gentle handling of the grapes. The vinification takes place traditionally in stainless steel tanks, while some of the Premier and Grand Cru wines undergo a small portion of aging in used barrels, allowing for a full malolactic fermentation. One of his oldest vineyard plots, Les Châtillons, planted in the early 1970s, sits just behind the hill of the Grand Crus and showcases the meticulous use of barrel aging, which adds complexity and depth to the cuvée. In 2016, Pierrick expanded his range by starting a small négoce operation, sourcing must from friends who predominantly farm on the left side of the river. This addition includes premier crus such as Beauroy, Beauregard and Vau de Vey, as well as the grand cru of Bougros. In 2019, Pierrick inherited 8 acres of vines from his father-in-law in the southern sector of Chablis, around the village of Courgis. This inheritance includes Petit Chablis, 5.5 acres of Chablis and just over half an acre of the premier cru Les Butteaux. Pierrick Laroche's dedication to his craft is evident in every bottle of wine he produces. The name of Pierrick's Domaine, "hâtes" refers to an old agricultural unit of measure, similar to the English rod. It evokes the long and slender fields used for sowing, where the longer rows made plowing easier with fewer turns. The term "hâtes" was often used to describe such fields. Pierrick’s parcel comes from the western end of Bougros, towards the top of the hill where the slope is only about 5%. Vinified in stainless steel, it was matured for 8 months in one old 800 litre barrel. Bougros is the last Grand Cru on the western side of the hill and enjoys a south to south-westerly exposition.
