Packed with spritzy, yeasty and fruity goodness, this piquette is made from organic and biodynamic Vermentino skins. It is blended with a small amount of fresh Vermentino juice into the piquette base prior to bottling, which fermented away in bottle to make a sparkling piquette a la pet nat. Super refreshing, grapey, clean and bright with a soft layer of yeasty goodness, goes down with out touching the sides. Wild fermented with no added SO2.

It's packed with floral and fruity aromas from the rapidly trending vermentino grape. Bright lemon in the glass, the palate is dry and refreshing and displays floral notes, fresh peach, citrus and green apple. The wine is rounded, with an ample acidity on the lingering finish. Our Classic Dry White is from the famous Italian Vermentino grape. It is pale straw in colour with lifted aromas of citrus blossom, lime juice indulge the palate. The wine finishes with a crisp acidity and lasting length. A beautiful daytime wine that pairs nicely with shellfish, fresh salad and grilled seafood or chicken.

This wine is refreshing and zesty. Typically, it is complex to taste, with lively aromas of cider apples and white flowers, combined with a palate of crushed limestone, lime and citrus core. It has that wonderful minerality and saltiness which Vermentino displays making it superb with garlic prawns, crab linguini and chicken tacos.Sourced from one of the few blocks of Vermentino in WA, grown on elevated well drained, deep gravel and laterite soils and ripening in warm dry summer days giving the wine its firm sense of Terroir, not dissimilar to its cousin the fashionable aromatic white of Sardinia.

It shows more commonalty with a Northern Rhône Valley white than its ancestral roots from the Mediterranean. Deeply golden in appearance with plenty of sediment in the bottle. Vermentino Many years ago when Jason Searle was helping out at Bass Phillip he came across Bill Downie. Bill and Jason realised that they shared some common ideals for wine. A friendship was then forged during viticulture studies , a passion for wine with definition of place and interest was often the bonding agent. After vintage in Italy Jason returned to keep working on a part-time basis in vineyards while Bill's star was on the rise making a name for himself as one of Australia's brightest young winemakers. Firstly at De Bortoli and then creating the William Downie wines, all this whilst spending the majority of the year in Burgundy. As Jason began to put some ideas in place to start making wine, Bill, now back in Australia, put forward the idea of making them together. Save Our Souls was born. The intention was to make affordable wine that was removed from the shadows of typical New World' wine making practices.
